本发明属于食品技术领域,公开了一种松露保健口服液及其生产工艺,其生产工艺为:冷冻松露粉碎后,加6~10倍量纯净水,超声提取,过滤,滤液用乙醇调节酒精度为30~60%,4℃静置12~24h,过滤,取续滤液,回收酒精,调节溶液体积,加入0.5~2%矫味剂,混匀,精滤,冷却包装,灭菌。本发明生产工艺的松露保健口服液清亮透明,无悬浮物,具有松露的特殊芳香。

技术领域
本发明属于食品技术领域,特别涉及一种松露保健口服液的生产工艺。
技术背景
鉴于松露的热敏感性和其独特性,目前市场上没有真正的松露深加工品,几乎所有的松露产品都是利用松露香精来达到对松露产品的味道和气味的追求,利用本发明所生产的成品最大限度的保留了松露的原始香味和其营养成分。
松露是世界上最珍贵的药食两用真菌之一,又称块菌、块菇、无娘果、猪拱菌等,被喻为“地下黄金”和“黑色钻石”,是地下生菌物中一个比较重要的子囊菌类群。野生松露营养丰富且有奇异香气,味道鲜美,有保肝、补肾、防止动脉硬化等作用。文献研究表明:野生松露含有丰富的蛋白质、18种氨基酸(包括人体不能合成的8种必需氨基酸)、不饱和脂肪酸、多种维生素、锌、锰、铁、钙、磷、硒等必需微量元素,以及松露多糖、鞘脂类、神经酰胺、三萜、α-雄烷醇、腺苷、松露酸、甾醇、多肽等大量的代谢产物,具有极高的营养保健价值。如何利用松露的营养价值制备保健食品,对松露后续产品的开发具有重要意义。
发明内容
本发明的目的是公开一种松露保健口服液的生产工艺,为充分利用松露资源提供了一条新的途径,并填补了现有的技术空白。
为解决以上问题,本发明采取了如下的技术方案:
本发明以水作为溶剂,超声提取,过滤,滤液进行醇沉,4℃静置12~24h,过滤,取续滤液,回收酒精,调节溶液体积,加入0.5~2%矫味剂,混匀,精滤,灭菌,冷却包装。
本发明生产工艺的保健口服液清亮透明,无悬浮物,具有松露的特殊芳香。

冷冻松露粉碎后,加6倍量纯净水,超声提取,过滤,滤液用乙醇调节酒精度为30%,4℃静置12h,过滤,取续滤液,回收酒精,调节溶液体积,加入0.5%矫味剂,混匀,精滤,冷却包装,灭菌。
实施例2松露保健口服液的制备工艺
冷冻松露粉碎后,加8倍量纯净水,超声提取,过滤,滤液用乙醇调节酒精度为50%,4℃静置12 h,过滤,取续滤液,回收酒精,调节溶液体积,加入1%矫味剂,混匀,精滤,冷却包装,灭菌。
实施例3松露保健口服液的制备工艺
冷冻松露粉碎后,加10倍量纯净水,超声提取,过滤,滤液用乙醇调节酒精度为60%,4℃静置24h,过滤,取续滤液,回收酒精,调节溶液体积,加入2%矫味剂,混匀,精滤,冷却包装,灭菌。
Claims (3)
1.一种松露保健口服液的生产工艺,其步骤为:
冷冻松露粉碎后,加6~10倍量纯净水,超声提取,过滤,滤液用乙醇调节酒精度为30~60%,4℃静置12~24h,过滤,取续滤液,回收酒精,调节溶液体积,加入0.5~2%矫味剂,混匀,精滤,冷却包装,灭菌。
2.根据权利要求1 所述的一种松露口服液,其特征在于所述的松露属于白松露、黑松露、夏松露中的一种或几种。
3.根据权利要求1所述的松露保健口服液的矫味剂为水苏糖、木糖醇或者低聚果糖等可适用于糖尿病人服用的物质。
