泡椒凤爪是近年来最为流行的小吃之一。以麻辣有滋、皮韧肉香而著称。泡椒凤爪既能登大雅之堂,也为普通老百姓所喜爱。此款美食具有开胃生津、促进血液循环的功效。制作过程比较讲究,这样才能使泡椒的劲辣味道沁入凤爪中。正宗的泡椒凤爪丰满洁白,咀嚼时骨肉生香,具有很强的催味功效。

本发明的目的在于提供一种泡椒凤爪。

一种泡椒凤爪,其特征在于:其是由下述重量份的原料制得:净鸡爪50-55、葱2-4、白砂糖1-2、食盐3-5、味精1-2、料酒3-5,中药酒20-30,野山椒15-19,生姜1-2,柠檬酸0.01-0.03,抗坏血酸 0.02-0.04,腌制粉20-30;
所述的中药酒由下述重量份的原料制得:竹叶兰2-4、黑皮根1-2、山楂3-5、女贞子1-2、玉竹1-2、三七3-5、人参花1-2、白酒80-90;
所述的腌制粉由下述重量份的原料混匀制得:红豆粉1-2,红茶粉1-2,维生素E片剂粉0.2-0.4、姜粉1-2、蒜粉1-3、葱粉2-4、蘑菇粉1-2,山楂粉1-2,牛肉纯粉5-8,纯牛油1-2,黑胡椒粉1-2,食盐3-5、白砂糖6-8,蜂王浆冻干粉1-2,酵母抽提物1-3,水解植物蛋白粉0.1-0.4,大蒜油0.1-0.2。

制备方法为:
(1)鸡爪放入水中煮10-20分钟,所述的水中还含有占水重量4-6%的食盐、3-5的米酒、1-2%的斑斓叶;
(2)将煮好的鸡爪取出立刻放入冰水中冷却30-60秒,再沥干水;
(3)将鸡爪上揉搓涂抹腌制粉,于25-30℃下腌制10-14小时;
(4)中药酒各原料混匀,密封存放15-20天,取出,过滤,得中药酒;
(5)葱、白砂糖、食盐、味精、料酒、中药酒、野山椒、生姜、柠檬酸、抗坏血酸 混匀后,加适量水,熬煮1-2小时,得汤料;
(6)将鸡爪放入汤料中浸泡6-8小时后,取出,真空包装,即得。
本发明的有益效果为:本发明的野山椒泡凤爪风味独特,产品食用方便,真空包装,便于携带,便于保存,具有养生食疗保健作用,丰富了产品附加值,增加了休闲类食品的种类与口味。本发明使用的中药酒具有一定的降血脂作用,先腌制后泡制的制备方法简单,同时使得凤爪口感更好。

一种泡椒凤爪,其是由下述重量份(kg)的原料制得:净鸡爪55、葱4、白砂糖1、食盐5、味精2、料酒5,中药酒30,野山椒19,生姜2,柠檬酸0.03,抗坏血酸 0.04,腌制粉30;
所述的中药酒由下述重量份的原料制得:竹叶兰4、黑皮根1、山楂5、女贞子1、玉竹2、三七5、人参花2、白酒90;
所述的腌制粉由下述重量份的原料混匀制得:红豆粉2,红茶粉2,维生素E片剂粉0.4、姜粉1、蒜粉3、葱粉4、蘑菇粉1,山楂粉2,牛肉纯粉6,纯牛油1,黑胡椒粉2,食盐5、白砂糖8,蜂王浆冻干粉2,酵母抽提物3,水解植物蛋白粉0.4,大蒜油0.2。

(2)将煮好的鸡爪取出立刻放入冰水中冷却60秒,再沥干水;
(3)将鸡爪上揉搓涂抹腌制粉,于30℃下腌制10小时;
(4)中药酒各原料混匀,密封存放17天,取出,过滤,得中药酒;
(5)葱、白砂糖、食盐、味精、料酒、中药酒、野山椒、生姜、柠檬酸、抗坏血酸 混匀后,加适量水,熬煮1小时,得汤料;
(6)将鸡爪放入汤料中浸泡7小时后,取出,真空包装,即得。

所述的中药酒由下述重量份的原料制得:竹叶兰2-4、黑皮根1-2、山楂3-5、女贞子1-2、玉竹1-2、三七3-5、人参花1-2、白酒80-90;
