本发明属于海产品深加工技术领域,涉及一种海参肽颗粒冲剂的制备方法,包括海参处理、海参酶解、灭酶、黄酒海参肽配制、冷冻干燥和颗粒制备六个步骤;先将鲜海参经过去杂处理后,再将海参放入冰糖水溶液打浆,然后加入胰蛋白酶进行酶解,酶解完成后再灭酶,再将干枸杞粉碎后与黄酒搅拌成黄酒枸杞浆液,并与灭酶海参匀浆液混合得黄酒海参肽液,然后用冷冻干燥设备干燥成片状海参肽,再将片状海参肽通过冷冻粉碎机磨成粉末状,然后通过制粒机制得海参肽颗粒,其制备工艺简单,设备易得,产品的腥味少,营养物质丰富,保健与养生效果好,口感佳,食用环境友好。

本发明属于海产品深加工技术领域,涉及一种以海洋产品海参为原料制备海参肽保健养生饮料的新工艺,特别是一种海参肽颗粒冲剂的制备方法。
背景技术:
随着生活水平的不断提高,人们对身体的保健与养生越来越重视,自古以来海参就作为一种营养价值极高的滋补品食用,海参是天然的营养宝库,含有高比例的蛋白质,丰富的维生素和对人体有益的多种微量元素,营养成分的种类高达50多种,食用海参对身体有多种益处,健脑益智、生血养血、预防心血管疾病、增强人体免疫力等等。目前,市场上的海参制品的品种繁多,功能各不相同;黄酒的营养丰富,有液态蛋糕之称,黄酒可帮助血液循环,促进新陈代谢,具有补血养颜、活血祛寒、通经活络的作用,能有效抵御寒冷刺激,预防感冒,黄酒还可作为中药的药引子,并有美容、抗衰老、减肥、保健的功效,营养学家已经证实饮用黄酒具有增进食欲、消除疲劳、气色红润、头发发黑光亮有神、抗肿瘤等功效,是最佳的养生补品;鲜海参的处理方法较为复杂,并且海参的腥味是大多海产品所共有的特性,不少人很不习惯这种味道,将海参通过酶解的方法加工制备成对人体有多种功效的海参肽,再与黄酒合理搭配,加工制备成既有保健养生,又能调节身体功能的保健养生产品,既减少了鲜海参的处理麻烦,又能随时方便食用的海参肽饮料速溶颗粒,将会受到人们的广泛认可。
发明内容:
本发明的目的在于克服现有技术存在的缺点,寻求设计一种以海参为原料,经过酶解制成海参肽再与黄酒合理配置,制备海参肽颗粒冲剂的加工方法。
为了实现上述目的,本发明的制备工艺包括海参处理、海参酶解、灭酶、黄酒海参肽配制、冷冻干燥与颗粒制备六个步骤:
(1)海参处理:取鲜活海参先用重量百分比浓度为2~5%的食盐水洗净参体,再用剪刀从海参的肚皮处剪开,放出其内脏杂物,然后用重量百分比浓度为10~15%的乙醇水溶液浸洗2~5分钟后,再放入沸水中浸煮2~4分钟,捞起置于0~5℃的冷水中冷却后得预处理海参备用;
(2)海参酶解:将预处理海参与重量百分比浓度为2~5%的冰糖水溶液按重量比1:3~5的比例混合后放入打浆机内高速搅拌成海参匀浆液,再将海参匀浆液控制温度为45~55℃并加入胰蛋白酶,胰蛋白酶的添加量为海参匀浆液重量的3~5%,然后用功率为60W-80W的超声波控制温度为45~55℃水浴进行酶解35~50分钟,得海参酶解液;
(3)灭酶:将海参酶解液放入90~100℃水浴灭酶10~20分钟,然后过滤除掉固体杂物,得灭酶海参匀浆液;
(4)黄酒海参肽配制:将干品枸杞粉碎成粉状,按黄酒重量的3~5%加入黄酒中搅拌成黄酒枸杞浆液,然后将黄酒枸杞浆液与灭酶海参匀浆液按3~5:1的比例混合,得黄酒海参肽液;
(5)冷冻干燥:将黄酒海参肽液放入冷冻干燥设备中进行冷冻干燥,控制温度为0℃以下,并在真空状态下水分由冰晶转为蒸汽除掉,冷冻干燥20~40小时,使水分含量控制在3~5%,制得片状海参肽。
(6)颗粒制备:将所得片状海参肽通过冷冻粉碎机进行低温状态下粉碎成细度为100~200目的粉末状,再将粉末状海参肽通过制药颗粒机控制粒度为1~2mm的颗粒状,得海参肽颗粒成品。
本发明所用冷冻干燥设备为市售的常规型冷冻干燥机,制药颗粒机的机器型号为YK—90。
本发明与现有技术相比,其制备工艺简单,设备易得,产品的腥味少,营养物质丰富,保健与养生功效好,口感佳,食用环境友好。
具体实施方式:
下面通过实施例对本发明作进一步描述。
实施例:
本实施例的制备工艺包括海参处理、海参酶解、灭酶、黄酒海参肽配制与喷雾干燥五个步骤:
(1)海参处理:取鲜活海参先用重量百分比浓度为2~5%的食盐水洗净参体,再用剪刀从海参的肚皮处剪开,放出其内脏杂物,然后用重量百分比浓度为10~15%的乙醇水溶液浸洗2~5分钟后,再放入沸水中浸煮2~4分钟,捞起置于0~5℃的冷水中冷却后得预处理海参备用;
(2)海参酶解:将预处理海参与重量百分比浓度为2~5%的冰糖水溶液按重量比1:3~5的比例混合后放入打浆机内高速搅拌成海参匀浆液,再将海参匀浆液控制温度为45~55℃并加入胰蛋白酶,胰蛋白酶的添加量为海参匀浆液重量的3~5%,然后用功率为60W-80W的超声波控制温度为45~55℃水浴进行酶解35~50分钟,得海参酶解液;
(3)灭酶:将海参酶解液放入90~100℃水浴灭酶10~20分钟,然后过滤除掉固体杂物,得灭酶海参匀浆液;
(4)黄酒海参肽配制:将干品枸杞粉碎成粉状,按黄酒重量的3~5%加入黄酒中搅拌成黄酒枸杞浆液,然后将黄酒枸杞浆液与灭酶海参匀浆液按3~5:1的比例混合,得黄酒海参肽液;
(5)冷冻干燥:将黄酒海参肽液放入冷冻干燥设备中进行冷冻干燥,控制温度为0℃以下,并在真空状态下水分由冰晶转为蒸汽除掉,冷冻干燥20~40小时,使水分含量控制在3~5%,制得片状海参肽。
(6)颗粒制备:将所得片状海参肽通过冷冻粉碎机进行低温状态下粉碎成细度为100~200目的粉末状,再将粉末状海参肽通过制药颗粒机控制粒度为1~2mm的颗粒状,得海参肽颗粒成品。
本实施例中涉及的黄酒包括即墨老酒、即墨黄酒、绍兴黄酒、绍兴花雕酒;所制得的海参肽颗粒冲剂食用时,用40~50℃的温水冲泡后直接饮用,或冲泡过程中加入少许蜂蜜后饮用。
Claims (1)
1.一种海参肽颗粒冲剂的制备方法,其特征在于包括海参处理、海参酶解、灭酶、黄酒海参肽配制、冷冻干燥与颗粒制备六个步骤:
(1)海参处理:取鲜活海参先用重量百分比浓度为2~5%的食盐水洗净参体,再用剪刀从海参的肚皮处剪开,放出其内脏杂物,然后用重量百分比浓度为10~15%的乙醇水溶液浸洗2~5分钟后,放入沸水中浸煮2~4分钟,捞起置于0~5℃的冷水中冷却得预处理海参备用;
(2)海参酶解:将预处理海参与重量百分比浓度为2~5%的冰糖水溶液按重量比1:3~5的比例混合后放入打浆机内高速搅拌成海参匀浆液,再将海参匀浆液控制温度为45~55℃并加入胰蛋白酶,胰蛋白酶的添加量为海参匀浆液重量的3~5%,然后用超声波控制温度为45~55℃水浴进行酶解35~50分钟,得海参酶解液;
(3)灭酶:将海参酶解液放入90~100℃水浴灭酶10~20分钟,然后过滤除掉固体杂物,得灭酶海参匀浆液;
(4)黄酒海参肽配制:将干品枸杞粉碎成粉状,按黄酒重量的3~5%加入黄酒中搅拌成黄酒枸杞浆液,然后将黄酒枸杞浆液与灭酶海参匀浆液按3~5:1的比例混合,得黄酒海参肽液;
(5)冷冻干燥:将黄酒海参肽液放入冷冻干燥设备中进行冷冻干燥,控制温度为0℃以下,并在真空状态下水分由冰晶转为蒸汽除掉,冷冻干燥20~40小时,使水分含量控制在3~5%,制得片状海参肽;
(6)颗粒制备:将所得片状海参肽通过冷冻粉碎机进行低温状态下粉碎成细度为100~200目的粉末状,再将粉末状海参肽通过制粒机制成粒度为1~2mm的颗粒状,得海参肽颗粒冲剂成品。
