Abstract
本发明公开一种速溶香蕉粉修饰的冰冻复合粉冻干速溶海参冲剂,其特征在于,包括以下重量份组分:海参40-50、微囊化速溶香蕉粉3-8、胰蛋白酶0.8-2、菠菜200-240、调味料10-12以及适量的纯净水和适量的活化离子水。本发明对海参酶解液进行冷冻、球磨粉碎、速溶香蕉粉修饰、辅助红外辐射的深冷冻、冻干、粉碎一系列处理后得到速溶海参,干燥效率高,口感好,将该速溶海参与菠菜和调味料组成冲剂,具有食用方便快捷营养高的特点。

技术领域
本发明属于海参加工领域,具体涉及一种速溶香蕉粉修饰的冰冻复合粉冻干速溶海参冲剂及其制备方法。
背景技术
海参(sea cucumber)包括所谓“海地瓜”的全部动物或指干海参,狭义是指海参属。海参离开水在极短时间内会自动融化,化作水状,无法实现长途运输,这就限制了海参产品加工和销售。目前市场上有常温储藏的干海参,冷藏的即食海参、高压海参、盐渍海参和少量的冻干海参,即食海参保质期短,成本高;干海参食用不方便,且大部分消费者不会加工。
常见的可以将海参加工成干粉便于保存和运输,现有的海参干粉加工方法之一的真空冷冻干燥技术具有能够最大限度的保持原料的营养、色泽、形态和风味,并且制品含水量低,复水性好优点,但是真空冷冻干燥技术的干燥速率以及节能减排往往是工业生产过程中需要考虑的首要问题。
发明内容
本发明针对速溶海参加工发展需求,提出一种速溶香蕉粉修饰的冰冻复合粉冻干速溶海参冲剂及其制备方法。
本发明采用的技术方案如下:
一种速溶香蕉粉修饰的冰冻复合粉冻干速溶海参冲剂,其特征在于,包括以下重量份组分:海参40-50、微囊化速溶香蕉粉3-8、胰蛋白酶0.8-2、菠菜200-240、调味料10-12以及适量的纯净水和适量的活化离子水。
一种速溶香蕉粉修饰的冰冻复合粉冻干速溶海参冲剂制备方法,其特征在于,包括以下步骤:
(1)取菠菜清洗干净后放入粉碎机中粉碎2-4h,之后采用间歇式微波干燥技术在微波功率80-90W、第一次干燥20-25min,第二次干燥10-15min,第三次干燥5-10min干燥粉碎菠菜得菠菜粉,
(2)取海参取出内脏后用水清洗干净,切片但保持海参的完整性,之后放入3-5倍的纯净水并95-98℃热水中漂烫,漂烫过程中不断搅拌海参,漂烫3-4h至熟化后冷却至35-45℃,加入胰蛋白酶以及总重量2-3倍的活化去离子水,搅拌酶解10-15h,之后温度升高到95-100℃,加热2-4min灭酶,过滤,得海参酶解液;
(3)取海参酶解液放入-10~-2℃的冷库中先进行预冷冻5-20h,之后在惰性气体环境中采用球磨机对其进行粉碎,得100-3000目粉,取该粉与速溶香蕉粉充分搅拌均匀得冰冻复合粉;将冰冻复合粉放入密闭冷冻干燥机中先在-2~-0℃的环境中冷冻,同时辅助红外辐射加热的方式促进冰冻复合粉与海藻粉的复合,并对其持续抽真空,该过程持续3-4h后,改变密闭冷冻干燥机的冷冻环境为-20~-18℃,稳定真空状态50-60Pa,冷冻4-12h得到深冷冻复合海参冻块;
(4)改变密闭冷冻干燥机的冷冻环境为-55~-45℃,进行冻干,18-20h后,改变密闭冷冻干燥机的冷冻环境为-25~-20℃,同时辅助红外辐加热干燥的方式,干燥3-4h达到水分含量为总重量的3-5%,得干粉;
(5)将干粉用高能球磨机粉碎20-30min得10-1000nm速溶海参粉体;
(6)取速溶海参粉体、菠菜粉、调味料配比均匀,氮气环境下包装即得。
本发明的有益效果体现在:
本发明对海参酶解液进行冷冻、球磨粉碎、速溶香蕉粉修饰、辅助红外辐射的深冷冻、冻干、粉碎一系列处理后得到速溶海参,干燥效率高,口感好,将该速溶海参与菠菜和调味料组成冲剂,具有食用方便快捷营养高的特点。
具体实施方式
实施例
本实施例所述速溶香蕉粉修饰的冰冻复合粉冻干速溶海参冲剂,其特征在于,包括以下重量份组分:海参45、微囊化速溶香蕉粉5、胰蛋白酶1.4、菠菜220、调味料11以及适量的纯净水和适量的活化离子水。
本实施例所述速溶香蕉粉修饰的冰冻复合粉冻干速溶海参冲剂制备方法,其特征在于,包括以下步骤:
(1)取菠菜清洗干净后放入粉碎机中粉碎2-4h,之后采用间歇式微波干燥技术在微波功率80-90W、第一次干燥20-25min,第二次干燥10-15min,第三次干燥5-10min干燥粉碎菠菜得菠菜粉,
(2)取海参取出内脏后用水清洗干净,切片但保持海参的完整性,之后放入3-5倍的纯净水并95-98℃热水中漂烫,漂烫过程中不断搅拌海参,漂烫3-4h至熟化后冷却至35-45℃,加入胰蛋白酶以及总重量2-3倍的活化去离子水,搅拌酶解10-15h,之后温度升高到95-100℃,加热2-4min灭酶,过滤,得海参酶解液;
(3)取海参酶解液放入-10~-2℃的冷库中先进行预冷冻5-20h,之后在惰性气体环境中采用球磨机对其进行粉碎,得100-3000目粉,取该粉与微囊化速溶香蕉粉充分搅拌均匀得冰冻复合粉;将冰冻复合粉放入密闭冷冻干燥机中先在-2~-0℃的环境中冷冻,同时辅助红外辐射加热的方式促进冰冻复合粉与海藻粉的复合,并对其持续抽真空,该过程持续3-4h后,改变密闭冷冻干燥机的冷冻环境为-20~-18℃,稳定真空状态50-60Pa,冷冻4-12h得到深冷冻复合海参冻块;
(4)改变密闭冷冻干燥机的冷冻环境为-55~-45℃,进行冻干,18-20h后,改变密闭冷冻干燥机的冷冻环境为-25~-20℃,同时辅助红外辐加热干燥的方式,干燥3-4h达到水分含量为总重量的3-5%,得干粉;
(5)将干粉用高能球磨机粉碎20-30min得10-1000nm速溶海参粉体;
(6)取速溶海参粉体、菠菜粉、调味料配比均匀,氮气环境下包装即得。

1.一种速溶香蕉粉修饰的冰冻复合粉冻干速溶海参冲剂,其特征在于,包括以下重量份组分:海参40-50、微囊化速溶香蕉粉3-8、胰蛋白酶0.8-2、菠菜200-240、调味料10-12以及适量的纯净水和适量的活化离子水。
2.一种速溶香蕉粉修饰的冰冻复合粉冻干速溶海参冲剂制备方法,其特征在于,包括以下步骤:
(1)取菠菜清洗干净后放入粉碎机中粉碎2-4h,之后采用间歇式微波干燥技术在微波功率80-90W、第一次干燥20-25min,第二次干燥10-15min,第三次干燥5-10min干燥粉碎菠菜得菠菜粉,
