背景技术
面粉是一种由小麦磨成的粉末。按面粉中蛋白质含量的多少,可以分为高筋面粉、中筋面粉、低筋面粉及无筋面粉。面粉(小麦粉)是中国北方大部分地区的主食。以面粉制成的食物品种繁多,花样百出,风味迥异。
玉米肽是从天然食品玉米中提取的玉米蛋白,经过酶降解及特定小肽分离技术而获得的小分子多肽物质。玉米肽的研发不光使肽类家族增添一名新的成员,而且更改写了玉米蛋白难以被人体吸收的历史。玉米肽作为玉米蛋白经过酶降解而获得的多种小肽的混合物,除具有肽类物质的优良特性——优于氨基酸或蛋白质的直接吸收、溶解性强(在大范围的pH值下均能完全溶于水,无浑浊和沉淀物产生)、稳定性强(对热稳定,组分不改变,功能不丧失)、安全性高(天然食品蛋白,安全可靠,无毒副作用)等特性以外,还具有自己所独有的特殊功能。
玉米肽所独有的特殊功能源于它特别的氨基酸分布,通过实验室的检测,发现玉米肽的氨基酸分布非常特别,它与大豆低聚肽中各种氨基酸分布均匀的特点不同,玉米肽中氨基酸的分布主要以丙氨酸、亮氨酸和谷氨酸3种氨基酸为主,这也就注定了玉米肽拥有以下与大豆低聚肽不一样的特殊功能。

本发明所要解决的技术问题在于提供一种味道好,营养成分高的富含玉米肽硒的多肽营养面粉。
本发明所要解决的技术问题采用以下技术方案来实现:
一种富含玉米肽硒的多肽营养面粉,由以下重量份数的组份组成,
所述改良剂为聚丙烯酸钠。
一种制备上述多肽营养面粉的工艺,包括如下步骤,
1)按组分的重量份数分别称取:小麦面粉,小麦芽粉,莲藕多糖,富硒酵母,花生芽粉,蜂花粉,改良剂,玉米肽,白茶粉,待用;
2)将分别称取的小麦面粉,小麦芽粉,莲藕多糖,花生芽粉,蜂花粉,改良剂,白茶粉先后倒入双层自动加热不锈钢搅拌釜内加入适量的水,并加热到55℃-60℃,每分钟240转,搅拌30分钟;
3)将称取的富硒酵母和玉米肽倒入已加热搅拌30分钟的组合物内继续搅拌25分钟;
4)将步骤3)中加热搅拌的组合物取出来凉至恒温;
5)用研磨器皿将凉到恒温的组合物研磨到150-200目;
6)按不同需求量,包装成袋进入消费市场。
本发明在面粉中添加有富含玉米肽硒的小麦芽粉和改良剂,采用本发明所述的技术方案生产而成的富含玉米肽的多肽营养面粉具有以下几方面优点:
1)面粉的营养价值高,强化后面粉中含硒24~32mg/kg,含玉米肽200~500μg/mg,完全可以满足人体的需求;
2)多肽是人体自身存在而且必需的活性物质,是人体的重要组成物质、营养物质,它广泛分布于人体各处。
近三十年来科学家对于多肽研究取得了突飞猛进的进展。研究证实,多肽类物质,除具有一般蛋白质的营养作用外,对人体还具有非常重要的不可替代的调节作用,这种作用几乎涉及到人体的所有生理活动,例如:神经、消化、吸收、代谢、循环、生长、生殖、内分泌等。多肽对人体的作用可以用八个字粗略概括,即:
抑制——抑制细胞变性,增强人体免疫力。
激活——激活细胞活性,有效清除对人体有害的自由基。
修复——修复人体变性细胞,改善细胞新陈代谢。
促进——促进、维持细胞正常的新陈代谢。强化的铁、锌、肽全部是以有机形式存在,生物活性很好,大大有利于人体的吸收。
3)红景天苷有抗疲劳、抗衰老、免疫调节、清除自由基等多种药理作用。
4)添加莲藕多糖,能够降低血糖,适合高血糖、高血压人群食用。
本发明的有益效果是:本发明面粉营养价值高,食用安全可靠,可制备成挂面,易于消化吸收,使人们在品尝美食的同时还能起到保健功能,营养价值高,长期食用能够提高免疫能力。

为了使本发明实现的技术手段、创作特征、达成目的与功效易于明白了解,下面结合具体实施例,进一步阐述本发明。
实施例1
一种富含玉米肽硒的多肽营养面粉,由以下重量份数的组份组成,
所述改良剂为聚丙烯酸钠。
一种制备上述多肽营养面粉的工艺,包括如下步骤,
1)按组分的重量份数分别称取:小麦面粉,小麦芽粉,莲藕多糖,富硒酵母,花生芽粉,蜂花粉,改良剂,玉米肽,白茶粉,待用;
2)将分别称取的小麦面粉,小麦芽粉,莲藕多糖,花生芽粉,蜂花粉,改良剂,白茶粉先后倒入双层自动加热不锈钢搅拌釜内加入适量的水,并加热到55℃-60℃,每分钟240转,搅拌30分钟;
3)将称取的富硒酵母和玉米肽倒入已加热搅拌30分钟的组合物内继续搅拌25分钟;
4)将步骤3)中加热搅拌的组合物取出来凉至恒温;
5)用研磨器皿将凉到恒温的组合物研磨到150-200目;
6)按不同需求量,包装成袋进入消费市场。
