Description
技术领域
本发明涉及食品技术领域,具体涉及一种多肽儿童营养面及其制备工艺。
背景技术
儿童生长发育较快,体内合成代谢旺盛,所需的能量和营养素的量相对比成人高,尤其是能量、蛋白质、脂类、钙、锌、铁等营养素。
一、能量:《中国居民膳食营养素参考摄入量》儿童能量的推荐量为6688-10032千焦。儿童期,能量的来源分虽为:55%-65%,脂肪25%-30%,蛋白质12%-14%。
二、蛋白质:我国儿童膳食蛋白质推荐摄入量如下表
三、脂类:儿童时期脂肪适宜摄入量以占总能量的25%-30%为宜,儿童少年时期是生长发育高峰期,能量的需要也达到了高峰,因此一般不过度限制脂肪摄入量,但过量摄入会增加肥胖及成年后心血管疾病。
四、碳水化合物:与蛋白质和脂肪相比,碳水化合物是更容易被利用的能量。保证适量碳水化合物摄入,不仅可以避免脂肪的过度摄入,同时谷类和薯类以及水果蔬菜摄入会增强膳食纤维及具有健康效用的低聚糖,对预防肥胖及心血管疾病都有重要意义。
五、矿物质:
(1)钙:儿童少年期正值生长突增高峰期,6-10岁800毫克/日,11-18岁青少年钙的适宜量为1000毫克/日。
(2)铁:铁缺乏可以引起贫血外,也可能降低学习能力、免疫力和抗感染能力。
(3)锌:儿童缺锌的临床表现是食欲差,味觉迟钝甚至消失,严重时引起生长迟缓,性发育不良及免疫功能受损。
(4)碘缺乏在儿童期和青春期的主要表现为甲状腺肿,尤其是青春期甲状腺发病率较高,需特别注意预防。儿童少年膳食碘推荐量:6-10岁为90微克/日,11-13岁为120微克/日,14-18岁为150微克/日,含碘最高的食物是海产品。
六、维生素:
(1)维生素A:儿童维生素A缺乏的发生率远高于成人,维生素A的推荐量:6岁为600微克/日,7-13岁为700微克/日。
(2)维生素B1:精加工谷类的普及,使儿童维生素B1的缺乏成为目前的营养问题。维生素B1的推荐量:6岁为0.7毫克/日,7岁为0.9毫克/日。
(3)维生素B2:儿童少年紧张的学习生活,使其易发生维生素B2缺乏症。维生素B2的推荐量:6岁为0.7毫克/日,7-11岁为1.0毫克/日,富含维生素B2的食物主要是奶类、蛋类、肝脏和谷类,蔬菜水果中含量较少。
(4)维生素C:儿童少年膳食维生素C的推荐量:6岁为70毫克/日,7-11岁为80毫克/日,11-14岁为90毫克/日,14-18岁为100毫克/日,新鲜的蔬菜、水果是维生素C丰富的食物来源。
鉴于对儿童食品的特性要求,提出本申请,提供一种营养较为全面的面类食品。
发明内容
本发明所要解决的技术问题在于提供一种营养价值高,食用安全的多肽儿童营养面及其制备工艺。
本发明所要解决的技术问题采用以下技术方案来实现:
一种多肽儿童营养面,由以下重量份数的组分制成:面粉80-120份、玉米肽1.5-2.5份、驴白血干粉3-5份、风味粉4-6份、冬瓜微粉4-6份、甜味肽0.4-0.6份、食用碘盐0.4-0.6份、菱角肉1.5-2.5份、党参粉1.5-2.5份、杨梅汁4-6份、山药多糖0.4-0.6份、姜黄素0.2-0.4份、蛋黄粉0.8-1.2份、蜂蜜干粉1-2份、益母草花粉0.4-0.6份、姑娘果1.5-2.5份、紫苏籽粉4-6份、紫薯4-6份及水适量。
各组分的较佳重量份数为:面粉100份、玉米肽2份、驴白血干粉4份、风味粉5份、冬瓜微粉5份、甜味肽0.5份、食用碘盐0.5份、菱角肉2份、党参粉2份、杨梅汁5份、山药多糖0.5份、姜黄素0.3份、蛋黄粉1份、蜂蜜干粉1.5份、益母草花粉0.5份、姑娘果2份、紫苏籽粉5份、紫薯5份及水适量。
上述风味粉是由以下重量份数的组分制成:玉米粉1.5份、五味子粉0.2份、百合粉2份、粳米粉2份、木耳粉0.5份、陈皮粉2份、胡萝卜粉2份、香蕉粉2份、高粱根粉2份、芝麻叶干粉2份、咖啡豆粉2份、小茴香粉2份、千里香粉2份、黑茶粉2份;制备时,将上述组分放入热锅中,快速翻炒2-3分钟,炒出混合香味即可。
上述冬瓜微粉的制备方法如下:
1)选取新鲜、充分成熟、肉质致密、瓜瓤小的冬瓜为原料,清洗干净后将冬瓜切成大块,保留瓜皮、瓜瓤、瓜子等;
2)将切好的冬瓜块送入蒸笼蒸熟,大约需要30-50分钟即可,冷却至常温后取出捣碎,得到冬瓜泥;
3)将冬瓜泥送入挤出造粒机,制成冬瓜颗粒,热挤出后的冬瓜条具有一定的弹性,将冬瓜颗粒送入烘干设备,在50-55℃的环境下低温烘烤,至水分含量在18%左右,得到干冬瓜颗粒;
4)将干冬瓜颗粒送入研磨机,连续研磨4小时,过200目筛网,得到冬瓜干粉;
5)将冬瓜干粉送入烘干设备,在45-50℃的环境下低温烘烤,至水分含量在8%左右,得到成品冬瓜微粉。
本发明的另一个目的是提供一种生产上述儿童营养面条的工艺,步骤如下:将菱角肉、姑娘果和紫薯送入蒸笼蒸熟,然后乘热捣碎,再加入面粉、玉米肽、驴白血干粉、风味粉、冬瓜微粉、甜味肽、食用碘盐、党参粉、杨梅汁、山药多糖、姜黄素、蛋黄粉、蜂蜜干粉、益母草花粉和紫苏籽粉,与适量水搅拌和面,然后熟化、复合、压延、切条制得,经烘干进行包装。
采用本发明所述的技术方案生产而成的营养面条具有以下几方面优点:
(1)面条的营养价值高,强化的后面条中含铁24-32mg/kg,含锌9-12mg/kg,含硒200-280μg/mg,维生素C:10-15g,维生素D2:0.001-0.005g,维生素E:1-2g,维生素B1:0.1-0.5g,维生素B2:0.1-0.5g,维生素B6:0.1-0.5g,维生素B12:0.0001-0.001g,烟酰胺:2-3g,泛酸:0.1-1g,叶酸:0.06-0.1g,完全可以满足儿童身体、智力发展的需求。
(2)强化的微量元素全部是以有机形式存在,生物活性很好,大大有利于人体的吸收。
(3)面条细腻,口感筋道,耐煮,不混汤,感观评分92分,达到工业产品优质级标准。
本发明的有益效果是:本发明营养丰富,不含有对人体健康和生长有害的物质,且原料来源广泛,制备工艺简单,成本低廉,添加有富含多种人体必需的微量元素。

为了使本发明实现的技术手段、创作特征、达成目的与功效易于明白了解,下面结合具体实施例,进一步阐述本发明。
实施例1
一种多肽儿童营养面,由以下重量份数的组分制成:面粉100份、玉米肽2份、驴白血干粉4份、风味粉5份、冬瓜微粉5份、甜味肽0.5份、食用碘盐0.5份、菱角肉2份、党参粉2份、杨梅汁5份、山药多糖0.5份、姜黄素0.3份、蛋黄粉1份、蜂蜜干粉1.5份、益母草花粉0.5份、姑娘果2份、紫苏籽粉5份、紫薯5份及水适量。
上述风味粉是由以下重量份数的组分制成:玉米粉1.5份、五味子粉0.2份、百合粉2份、粳米粉2份、木耳粉0.5份、陈皮粉2份、胡萝卜粉2份、香蕉粉2份、高粱根粉2份、芝麻叶干粉2份、咖啡豆粉2份、小茴香粉2份、千里香粉2份、黑茶粉2份;制备时,将上述组分放入热锅中,快速翻炒2-3分钟,炒出混合香味即可。
上述冬瓜微粉的制备方法如下:
1)选取新鲜、充分成熟、肉质致密、瓜瓤小的冬瓜为原料,清洗干净后将冬瓜切成大块,保留瓜皮、瓜瓤、瓜子等;
