本发明公开了一种即食型花香肉松及其加工方法,其由以下重量份的原料制成:瘦肉40-50、酱油8-12、生姜0.5-1、小茴香0.4-0.8、桂皮0.3-0.6、打抛叶0.2-0.4、丁香0.15-0.25、香蜂草0.2-0.3、黄酒2-3、白糖1.5-2、食盐0.6-1.2、茉莉花1-2、南瓜花0.5-1、芙蓉花0.8-1.4、白兰叶0.4-0.8、甜叶菊0.5-1。本发明制得的肉松,以具有补中益气、滋养脾胃的牛肉为主原料,添加其他多种食材,营养丰富均衡,香酥适口,风味独特,添加其他中药成分,增强保健功效,能够健脾益气补虚劳,可用于气短体虚、筋骨酸软、久病身体虚弱、不思饮食者食用,其他人群食用亦有益健康。

本发明涉及一种健脾益气肉松及其制备方法,属于食品加工技术领域。
背景技术
肉松,又称肉绒、肉酥,是中国著名的汉族美食,具有营养丰富、美味可口、携带方便等特点,深受人们的喜爱。肉松是用猪的瘦肉或鱼肉、鸡肉除去水分后而制成的,扩充了即食肉肉食品的范围,但由单一的肉食品加工制得的肉松,限制了其口感及营养保健功能,随着人们生活水平的提高,对食品的品种要求更丰富,特别注重食品的保健作用,所以市场急需一种营养丰富均衡兼具保健功能,口感好且风味独特的肉松食品。
发明内容
本发明的目的在于提供一种营养丰富均衡兼具保健功能、口感好且风味独特的健脾益气肉松及其制备方法,迎合更多消费者的需要。
为实现上述目的,本发明采用的技术方案如下:
一种健脾益气肉松,是由以下重量份的原料组成:
牛肉160-220、籽瓜汁10-15、黄秋葵6-10、山药10-15、黑豆粉15-25、玉米8-12、葛粉6-8、黄芪1-2、合欢花2-3、丝瓜藤1-2、党参1-2、茯苓2-3、藿香叶1-2、白花蛇舌草1-3、食盐3-6、酱油8-15、三花酒10-15、营养添加剂3-5;
所述的营养添加剂由下述重量份的原料制成:海参冻干粉0.5-2、紫锥菊2-4、刺五加2-3、玉竹2-3、槐花蜜4-6、米酒适量;
所述的的营养添加剂的的制备方法为:将紫锥菊、刺五加、玉竹分别除杂洗净烘干,破碎至40-80目混合,加入混合物5-10倍米酒,在5-10℃密封静置2-4个月,离心过滤,滤液与其他剩余混合均匀,即得。
所述的健脾益气肉松的制备方法,包括以下步骤:
(1)、取鲜嫩玉米与去皮洗净切块山药、黄秋葵混合破碎,加入籽瓜汁研磨成浆,冷冻干燥,破碎至80-100目,得冻干粉;
(2)、将黄芪、合欢花、丝瓜藤、藿香叶、白花蛇舌草等中药原料破碎至30-60目,装入净纱布袋内封口,与除杂洗净瘦切片牛肉一并入锅,加水焖煮至牛肉熟烂,捞出牛肉片沥干,再将牛肉片与三花酒混合均匀,蒸制15-30分钟,取出牛肉片做成肉丝;
(3)、将肉丝、冻干粉、葛粉、黑豆粉混合,放入锅中,加入其它剩余原料,文火翻炒至肉丝蓬松,即可。
上述的籽瓜汁,为葫芦科的籽瓜果肉打制成汁,属低糖瓜类,具有利尿、润肺、健脾的功效因子,具备低脂、低糖、低热的特性,对糖尿病、肥胖症也有辅助医疗作用;藿香叶为唇形科多年生草本植物的叶,具有化湿脾、理气和胃的功效。
本发明的有益效果:
本发明制得的肉松,以具有补中益气、滋养脾胃的牛肉为主原料,添加其他多种食材,营养丰富均衡,香酥适口,风味独特,添加其他中药成分,增强保健功效,能够健脾益气补虚劳,可用于气短体虚、筋骨酸软、久病身体虚弱、不思饮食者食用,其他人群食用亦有益健康。

实施例1
一种健脾益气肉松,是由以下重量(斤)的原料组成:
牛肉220、籽瓜汁15、黄秋葵6、山药12、黑豆粉25、玉米10、葛粉6、黄芪1、合欢花2、丝瓜藤1、党参1、茯苓2、藿香叶1、白花蛇舌草2、食盐4、酱油12、三花酒14、营养添加剂4;
所述的营养添加剂由下述重量(斤)的原料制成:海参冻干粉1.5、紫锥菊2、刺五加2、玉竹3、槐花蜜5、米酒适量;
所述的的营养添加剂的的制备方法为:将紫锥菊、刺五加、玉竹分别除杂洗净烘干,破碎至80目混合,加入混合物10倍米酒,在6℃密封静置3个月,离心过滤,滤液与其他剩余混合均匀,即得。
所述的健脾益气肉松的制备方法,包括以下步骤:
(1)、取鲜嫩玉米与去皮洗净切块山药、黄秋葵混合破碎,加入籽瓜汁研磨成浆,冷冻干燥,破碎至80目,得冻干粉;
(2)、将黄芪、合欢花、丝瓜藤、藿香叶、白花蛇舌草等中药原料破碎至60目,装入净纱布袋内封口,与除杂洗净瘦切片牛肉一并入锅,加水焖煮至牛肉熟烂,捞出牛肉片沥干,再将牛肉片与三花酒混合均匀,蒸制20分钟,取出牛肉片做成肉丝;
(3)、将肉丝、冻干粉、葛粉、黑豆粉混合,放入锅中,加入其它剩余原料,文火翻炒至肉丝蓬松,即可。

1.一种健脾益气肉松,其特征在于,是由以下重量份的原料组成:
牛肉160-220、籽瓜汁10-15、黄秋葵6-10、山药10-15、黑豆粉15-25、玉米8-12、葛粉6-8、黄芪1-2、合欢花2-3、丝瓜藤1-2、党参1-2、茯苓2-3、藿香叶1-2、白花蛇舌草1-3、食盐3-6、酱油8-15、三花酒10-15、营养添加剂3-5;
所述的营养添加剂由下述重量份的原料制成:海参冻干粉0.5-2、紫锥菊2-4、刺五加2-3、玉竹2-3、槐花蜜4-6、米酒适量;
所述的的营养添加剂的的制备方法为:将紫锥菊、刺五加、玉竹分别除杂洗净烘干,破碎至40-80目混合,加入混合物5-10倍米酒,在5-10℃密封静置2-4个月,离心过滤,滤液与其他剩余混合均匀,即得。
2.一种如权利要求1所述的健脾益气肉松的制备方法,其特征在于包括以下步骤:
(1)、取鲜嫩玉米与去皮洗净切块山药、黄秋葵混合破碎,加入籽瓜汁研磨成浆,冷冻干燥,破碎至80-100目,得冻干粉;
(2)、将黄芪、合欢花、丝瓜藤、藿香叶、白花蛇舌草等中药原料破碎至30-60目,装入净纱布袋内封口,与除杂洗净瘦切片牛肉一并入锅,加水焖煮至牛肉熟烂,捞出牛肉片沥干,再将牛肉片与三花酒混合均匀,蒸制15-30分钟,取出牛肉片做成肉丝;
(3)、将肉丝、冻干粉、葛粉、黑豆粉混合,放入锅中,加入其它剩余原料,文火翻炒至肉丝蓬松,即可。
