羊肉的众多吃法中,制成羊肉串则最为普遍,现有的羊肉串的口味比较单一。

本发明目的就是为了弥补已有技术的缺陷,提供一种当归补血活血羊肉串及其制备方法。

一种当归补血活血羊肉串,其特征在于由以下重量份的原料制成:
鲜羊肉300-320、蕨菜冻干粉6-7、姑娘果7-9、熟绿豆粉5-6、小麦胚芽5-7、娃娃菜7-8、羽扇豆渣4-8、苹果籽汁9-10、焦糖粉5-6、生抽5-6、料酒4-5、孜然粉10-13、椒盐适量、丝瓜皮2-3、当归4-6、犁头草1-2、霸王花1-2、蒲公英2-3、营养添加粉6-8;
所述的营养添加粉由以下重量份的原料制成:
河蚌肉7-8、飞碟瓜5-6、冬粉薯7-9、葡萄酒2-3、青花椰菜粉6-7、黑醋栗7-8、煅牡蛎粉5-6、紫皮石斛花3-4、异叶茴芹2-3、万年甘2-4、山香圆叶1-3、当归叶1-2;
制备方法为:(1)将紫皮石斛花、异叶茴芹、万年甘、山香圆叶、当归叶混合,水提2-3次,过滤,合并滤液;将飞碟瓜、冬粉薯、黑醋栗混合,加滤液、煅牡蛎粉打浆,所得浆液经喷雾干燥处理后,得蔬果药粉;

(1)将丝瓜皮、当归、犁头草、霸王花、蒲公英及以下步骤未涉及的原料混合,水提3-4次,过滤,合并滤液;在所得滤液中加焦糖粉、生抽、料酒、孜然粉、椒盐,混合均匀后,加3-5倍水稀释后,得腌制液;
(2)将羽扇豆渣、小麦胚芽混合在苹果籽汁中浸泡30-40分钟后,与姑娘果、娃娃菜混合打浆,所得浆液经喷雾干燥处理后,得粉末;所得粉末与蕨菜冻干粉、熟绿豆粉、营养添加粉混合均匀,得裹粉;
(3)将鲜羊肉洗净、沥干水分后,切成重约 3-4g 的方形块状,得到羊肉块 ;将羊肉块与腌制液混合,送入滚揉机中,滚揉30-40分钟,再在1-5℃的低温下静置腌制 6-10 小时后,用竹签串起来,撒上裹粉,烘烤至熟,即得。

所述的营养添加粉由以下重量份的原料制成:
河蚌肉8、飞碟瓜6、冬粉薯9、葡萄酒3、青花椰菜粉7、黑醋栗8、煅牡蛎粉6、紫皮石斛花4、异叶茴芹3、万年甘4、山香圆叶3、当归叶2;

(1)将丝瓜皮、当归、犁头草、霸王花、蒲公英及以下步骤未涉及的原料混合,水提3-4次,过滤,合并滤液;在所得滤液中加焦糖粉、生抽、料酒、孜然粉、椒盐,混合均匀后,加3-5倍水稀释后,得腌制液;
(2)将羽扇豆渣、小麦胚芽混合在苹果籽汁中浸泡30-40分钟后,与姑娘果、娃娃菜混合打浆,所得浆液经喷雾干燥处理后,得粉末;所得粉末与蕨菜冻干粉、熟绿豆粉、营养添加粉混合均匀,得裹粉;
(3)将鲜羊肉洗净、沥干水分后,切成重约 3-4g 的方形块状,得到羊肉块 ;将羊肉块与腌制液混合,送入滚揉机中,滚揉30-40分钟,再在1-5℃的低温下静置腌制 6-10 小时后,用竹签串起来,撒上裹粉,烘烤至熟,即得。
