1.一种香酥虾仁豆腐包,其特征在于包子馅由以下重量份的原料制成:豆腐90-100、虾仁10-15、猪蹄膀2-3、柚子皮1-2、鸡眼草1-2、大鲵皮粉1_2、朝天罐0.8_1、叶底红1-1.2、龙舌草0.8_1、玉米油3_4、粉丝2_3、胡椒粉1-2、花椒粉1_2、养菜4_5、肉骨粉1-2、干酒糟2-3、营养添加剂3-4、盐、水适量;所述营养添加剂由下列重量份的原料制成:楮实子1-2、三七花2-3、黄连叶2-2.5、黄豆4-5、仙人掌3-3.5、绿豆芽4_5、君迀子8_9、猪肝10-12 ;所述营养添加剂制备方法为: (1)将楮实子、三七花、朽1檬草、黄连叶、君迀子加4-5倍的水大火煎煮40-45分钟,压滤去渣,得营养液; (2)将黄豆、绿豆芽加两倍的水浸泡20-30分钟后打浆,过滤除渣,得浆汁; (3)将仙人掌、猪肝切成细碎搅拌混合入碾钵碾成泥状,倒入营养液及浆汁,搅拌至混合均匀,小火熬膏后烘干磨成粉末,即得;所述的香酥虾仁豆腐包的制备方法包括以下步骤: (1)将柚子皮、鸡眼草、朝天罐、叶底红、龙舌草加4-5倍的水,炭火煎煮1-2小时,过滤除渣,得药液,再将药液喷雾干燥得药粉; (2)将猪蹄膀入水浸泡30-40分钟后切碎与虾仁混合在一起捣碎成泥,再倒入胡椒粉拌匀,拌匀后的虾仁与猪蹄膀送入蒸笼内蒸熟,将荠菜清洗后切成碎末并倒入蒸熟后的虾仁与猪蹄膀内混合均匀得鲜香肉泥; (3)将粉丝在干的时候用手捏成不超过一厘米长的碎段,入锅煮熟后捞出倒入玉米油内,同时往玉米油内倒入花椒粉、大鲵皮粉、肉骨粉及干酒糟,来回搅拌;搅拌均匀后小火调羹; (4)将豆腐切成玉米粒大小的碎丁后炒熟,出锅后撒上步骤(I)所得药粉再倒入步骤(2)所得鲜香肉泥及步骤(3)所得调羹并与盐充分混合后即成香酥虾仁豆腐包子馅; (5)将制好的香酥虾仁豆腐包子馅包入包子皮中间,做成包子即可。
