Abstract
本发明公开了一种麦香味蓝莓蒸糕,由下列重量份的原料制成:大麦50-60、燕麦粉30-35、绿豆粉15-20、蓝莓20-25、苏子2-3、苦参1-2、千头艾纳香叶1-2、珍珠粉3-4、麦芽粉4-5、鸡爪10-15、料酒2-3、食盐2-3、红糖5-6、椰子油2-3、助剂1-2、水适量;本发明的麦香味蓝莓蒸糕,采用大麦、燕麦粉、绿豆粉、蓝莓等作为主原料,添加的大麦具坚果香味,还具有消渴除热的作用。燕麦除了有天然的保健功能外,还具有很高的美容价值。制得的麦香味蓝莓蒸糕,具有麦香味,不但风味独特,而且原料配比以及工艺制作合理、营养保健等优点,符合现代人对食品的健康绿色的要求。添加的椰子油具提高免疫力、降低胆固醇、美容抗老化、促进消化等作用。

技术领域
本发明涉及一种食品及其加工领域,特别涉及一种麦香味蓝莓蒸糕及其制备方法。
背景技术
蒸糕是汉族传统糕点之一,尤其是北方多数地区均有各种做法的蒸糕流传于世,其口感松软香甜,尤其受到消费者的喜爱与追捧。由于传统做法中,蒸糕主要以面粉为原料,且大多做法单一,原料简单,并且含糖量较高。使得不少患有高血压、高血脂、糖尿病患者望而却步。随着人们对于养生的广泛关注,科学健康的食品越来越受到人们的关注。
蓝莓果实中除了常规的糖、酸和VC外,富含VE、VA、VB、SOD、熊果苷、蛋白质、花青苷、食用纤维以及丰富的K、Fe、Zn、Ca等矿物质元素。具有护心、明目、养颜护肤、消炎止痛、抑癌抗瘤、抗衰抗辐射的作用。蓝莓果实的花色苷色素对眼睛有良好的保健作用。蓝莓的果胶含量很高,能有效降低胆固醇,防止动脉粥样硬化,促进心血管健康。蓝莓富含维生素C,有增强心脏功能,预防癌症和心脏病的功效,能防止脑神经衰老、增进脑力。
大麦具坚果香味,碳水化合物含量较高,有消渴除热的作用,还可以增强体力、滋润肌肤,且有利于呼吸系统。燕麦富含淀粉、蛋白质、脂肪、B族维生素、尼克酸、叶酸、泛酸、钙、铁等营养成分,具有益肝和胃、养颜护肤等功效。本发明的麦香蓝莓蒸糕,融合入大麦、燕麦与蓝莓的口感与营养于糕点中,不仅口感独特,还具有很好的营养保健价值。
发明内容
本发明弥补了现有技术的不足,提供一种麦香味蓝莓蒸糕及其制备方法。
本发明的技术方案如下:
本发明蓝莓糕点由下列重量份的原料制成:大麦50-60、燕麦粉30-35、绿豆粉15-20、蓝莓20-25、苏子2-3、苦参1-2、千头艾纳香叶1-2、珍珠粉3-4、麦芽粉4-5、鸡爪10-15、料酒2-3、食盐2-3、红糖5-6、椰子油2-3、助剂1-2、水适量;
所述助剂由下列重量份的原料制成:高粱30-40、花生粉25-30、荚蒾1-2、阴香根1-2、朱槿花4-5、梨花5-6、鸡骨7-8、荷叶粉3-4、菊粉3-4、龟苓膏粉3-4、山芋梗7-8、酸豆奶20-25、苹果汁4-5、寿司醋3-4、杨梅汁7-9、椰壳适量、水适量;制备方法是将荚蒾、阴香根、朱槿花、寿司醋与鸡骨放入适量水中文火煎煮1-2小时,滤掉沉渣,得煎煮液;将梨花与高粱中加入适量水加热蒸熟后,晒干后放入冷冻室里冷冻10-12小时,再与荷叶粉、菊粉、龟苓膏粉混合后放入炒锅中炒干,研磨成粉,得混合粉;将山芋梗于苹果汁以及适量水打成汁,再与上述所得的煎煮液、花生粉、酸豆奶以及其它剩余成分混合,放入椰壳内用水蒸熟后,取出干燥成粉,再与上述所得的混合粉混合均匀,即可。
所述蓝莓糕点的制备的具体步骤如下:
(1)将大麦炒香后加入适量水加热煮沸后,分离大麦与大麦茶,备用;
(2)将苏子、苦参、千头艾纳香叶加入适量水文火煎煮1-2小时,滤掉沉渣,得煎煮液;
(3)将椰子油烧热,放入红糖小火熬化后加入洗净的蓝莓以及步骤1所得的大麦茶、步骤2所得的煎煮液,加热煮沸后加入燕麦粉、绿豆粉、珍珠粉、麦芽粉混合,边加热边搅拌至煮熟,得混合物料,备用;
(4)将步骤1所得的大麦与鸡爪、料酒、食盐以及其它剩余成分混合,大火煮沸后转小火慢炖2-3小时,至汤汁浓稠,趁热与步骤3的混合物料混合,搅拌均匀,放入模具中成型,放入冷藏室中冷藏5-7小时,取出即可。
助剂中朱槿为锦葵科木槿属落叶灌木,其花性味甘寒,有凉血、解毒、利尿、消肿、清肺、化痰等功效。荚蒾为忍冬科荚蒾属植物荚蒾,味酸,性微寒,具有清热解毒、疏风解表的作用。罗布麻叶双子叶植物纲罗布麻的叶子,味甘、苦,性凉,具有归肝经、平肝安神、清热利水的作用。阴香根为樟科樟属植物阴香的根,味辛,具有治心痛、气痛的功效。
原料中苏子为唇形科植物紫苏的干燥成熟果实,味辛,性温,归肺、大肠经,具有降气消痰、止咳平喘、润肠通便的作用。千头艾纳香叶为菊科艾纳香属植物千头艾纳香叶,以叶入药,味辛,性平,具有祛风湿、消肿止痛的作用。
本发明的有益效果:

下面结合以下具体实施方式对本发明作进一步的详细描述:
称取下列重量份(kg)的原料制成:大麦55、燕麦粉33、绿豆粉18、蓝莓22、苏子2、苦参1、千头艾纳香叶1、珍珠粉3、麦芽粉5、鸡爪14、料酒2、食盐2、红糖5、椰子油3、助剂1、水适量;
所述助剂由下列重量份(kg)的原料制成:高粱35、花生粉28、荚蒾1、阴香根1、朱槿花4、梨花6、鸡骨8、荷叶粉3、菊粉3、龟苓膏粉4、山芋梗8、酸豆奶24、苹果汁4、寿司醋3、杨梅汁8、椰壳适量、水适量;制备方法是将荚蒾、阴香根、朱槿花、寿司醋与鸡骨放入适量水中文火煎煮1小时,滤掉沉渣,得煎煮液;将梨花与高粱中加入适量水加热蒸熟后,晒干后放入冷冻室里冷冻11小时,再与荷叶粉、菊粉、龟苓膏粉混合后放入炒锅中炒干,研磨成粉,得混合粉;将山芋梗于苹果汁以及适量水打成汁,再与上述所得的煎煮液、花生粉、酸豆奶以及其它剩余成分混合,放入椰壳内用水蒸熟后,取出干燥成粉,再与上述所得的混合粉混合均匀,即可。

1.一种麦香味蓝莓蒸糕,其特征在于,由下列重量份的原料制成:大麦50-60、燕麦粉30-35、绿豆粉15-20、蓝莓20-25、苏子2-3、苦参1-2、千头艾纳香叶1-2、珍珠粉3-4、麦芽粉4-5、鸡爪10-15、料酒2-3、食盐2-3、红糖5-6、椰子油2-3、助剂1-2、水适量;所述助剂由下列重量份的原料制成:高粱30-40、花生粉25-30、荚蒾1-2、阴香根1-2、朱槿花4-5、梨花5-6、鸡骨7-8、荷叶粉3-4、菊粉3-4、龟苓膏粉3-4、山芋梗7-8、酸豆奶20-25、苹果汁4-5、寿司醋3-4、杨梅汁7-9、椰壳适量、水适量;所述助剂的制备方法是将荚蒾、阴香根、朱槿花、寿司醋与鸡骨放入适量水中文火煎煮1-2小时,滤掉沉渣,得煎煮液;将梨花与高粱中加入适量水加热蒸熟后,晒干后放入冷冻室里冷冻10-12小时,再与荷叶粉、菊粉、龟苓膏粉混合后放入炒锅中炒干,研磨成粉,得混合粉;将山芋梗与苹果汁以及适量水打成汁,再与上述所得的煎煮液、花生粉、酸豆奶以及除椰壳以外的其它剩余成分混合,放入椰壳内用水蒸熟后,取出干燥成粉,再与上述所得的混合粉混合均匀,即可。
2.根据权利要求1所述麦香味蓝莓蒸糕,其特征在于,制备方法的具体步骤如下:
(1)将大麦炒香后加入适量水加热煮沸后,分离大麦与大麦茶,备用;
(2)将苏子、苦参、千头艾纳香叶加入适量水文火煎煮1-2小时,滤掉沉渣,得煎煮液;
(3)将椰子油烧热,放入红糖小火熬化后加入洗净的蓝莓以及步骤(1)所得的大麦茶、步骤(2)所得的煎煮液,加热煮沸后加入燕麦粉、绿豆粉、珍珠粉、麦芽粉混合,边加热边搅拌至煮熟,得混合物料,备用;
(4)将步骤(1)所得的大麦与鸡爪、料酒、食盐以及其它剩余成分混合,大火煮沸后转小火慢炖2-3小时,至汤汁浓稠,趁热与步骤(3)的混合物料混合,搅拌均匀,放入模具中成型,放入冷藏室中冷藏5-7小时,取出即可。
