老鸭汤,是一种集美食养生,传统滋补,民间食疗为一体的大众消费型汤锅食品。“老鸭汤”以其汤鲜味美、老鸭皮糯肉耙、萝卜酸香爽口、具有独特的风味,令人常食不腻。不管是男女老少、天南地北、春夏秋冬、一年四季都能食用。
大暑宜食老鸭汤。由于夏季气候炎热而又多雨,暑热夹湿,常使人脾胃受困,食欲不振,因此需要用饮食来调补,增加营养物质的摄入,达到祛暑消疲的目的。营养物质应以清淡、滋阴食品为主,即“清补”。老鸭就是暑天的清补佳品,它不仅营养丰富,而且因其常年在水中生活,性偏凉,有滋五脏之阳、清虚劳之热、补血行水、养胃生津的功效。
我国古代医学对鸭作为滋补品有所论述,《名医别录》中称鸭肉为“妙药”和滋补上品。民间亦有“大暑老鸭胜补药”的说法。老鸭炖食时可加入莲藕、冬瓜等蔬菜煲汤食用,既可荤素搭配起到营养互补的效果,又能补虚损、消暑滋阳,实为夏日滋补佳品。如加配芡实、薏苡仁同炖汤则滋阳效果更佳,且能健脾化湿、增进食欲。
粥,又称为“糜”,是我国饮食文化的精粹之一,是我国独有历史地理人文环境中的特定产物。早在六七千年前,祖先就开始以粥充饥,《周书》上记载:“黄帝始烹谷为粥。”原来从古人开化之初,粥就已经有了自己最原初的文化形态。
粥可调节胃口,增进食欲,补充身体需要的水分。它味道鲜美、润喉易食,营养丰富又易于消化,实在是养生保健的佳品。粥的妙不可言,在于它介于饭、菜和汤三者之间。

串铃草:是唇形科糙苏属植物,为多年生草本,主风湿性关节炎;感冒;跌打损伤;体虚发热。
蘘荷:是一种多年生姜科草本,根部具有药用价值,其嫩花序、嫩叶可当蔬菜,花序可治咳嗽,配生香榧治小儿百日咳有显效。
丁葵草:是一种多年生豆科小草本,生于荒野。全草夏秋采收,晒干,可以祛瘀消肿,调起利湿。
峨参叶:为伞形科植物峨参的叶,多年生草本,挖根,洗净煮熟,去外皮晒干或烘干可药用,叶鲜用或晒干研粉,外用治创伤。
一种老鸭汤养生粥的制备方法,其特征在于包括以下几个步骤:
(1)精选老麻鸭提前用冷水泡15~20min去除里面的淤血,然后再用开水焯一下,切成馒头大小的块状,将苦瓜去皮后切成片;
(2)准备陶锅一个,加入姜片、(1)所述的老鸭块、香菇、灵芝、菊花、山药、细盐、百合、陈皮、干玉米粒、水,盖实盖子,将陶锅放于燃气灶上,调大火烧开,之后小火持续烧80~100min;
(3)准备砂锅,放入粳米、(1)所述的苦瓜片、竹笋、海带、香葱、水,烧开,焖10~15min;
(4)打开所述(3)的砂锅,倒入助剂和(2)所述的老鸭汤,搅拌均匀,再次烧开,焖10~15min即可。
