本发明公开了一种鸡肝补血绿豆糕及其制备方法,其由下列重量份的制成:绿豆粉25-30、绵白糖18-22、小磨麻油15-20、精面粉3-5、柿霜2-3、樱桃核粉2-3、山楂核粉1-3、蜂蜜3-4、豆沙4-6、鸡肝3-5、花生衣0.4-0.6、洛神花0.5-0.8、牛奶根0.3-0.6、红豆皮0.2-0.4、鸡血藤0.3-0.5、白芍0.2-0.3、党参0.4-0.5、阿胶0.1-0.3。本发明采用花生衣、洛神花、牛奶根、红豆皮、鸡血藤等中药辅助熬煮鸡肝,上述中药均具有补血作用,可以大大提高鸡肝的营养保健功能,然后将鸡肝冻干粉与豆沙混合,作为绿豆糕的馅料,可以显著提高绿豆糕的补血保健功能。

背景技术
绿豆糕是以绿豆粉、绵白糖、面粉等为原料加工制作的一种传统食品。因其松软香浓、味美香甜、入口湿润、细腻、化口度高,深受人们的喜爱。绿豆糕有京式、苏式、闽式等种类,制作工艺大致为绿豆制成粉,与糖、水、油拌匀后成型,蒸制10分钟一15分钟或不蒸制而成,其成分简单,除具有防署祛热、清火清毒,无其它保健功能,营养保健价值低。
发明内容
本发明的目的在于一种鸡肝补血绿豆糕及其制备方法,提高绿豆糕的营养保健价值。
本发明采用的技术方案如下:
    一种鸡肝补血绿豆糕,由下列重量份的制成:绿豆粉 25-30、绵白糖 18-22、小磨麻油15-20、精面粉 3-5、柿霜 2-3、樱桃核粉 2-3、山楂核粉1-3、蜂蜜 3-4、豆沙4-6、鸡肝 3-5、花生衣 0.4-0.6、洛神花0.5-0.8、牛奶根 0.3-0.6、红豆皮 0.2-0.4、鸡血藤0.3-0.5、白芍0.2-0.3、党参 0.4-0.5、阿胶0.1-0.3。
    优选地,一种鸡肝补血绿豆糕,由下列重量份的制成:绿豆粉 25、绵白糖 20、小磨麻油16、精面粉 4、柿霜 2、樱桃核粉 2、山楂核粉2、蜂蜜 3、豆沙5、鸡肝 5、花生衣 0.5、洛神花0.6、牛奶根 0.4、红豆皮 0.3、鸡血藤0.4、白芍0.2、党参 0.4、阿胶0.2。
    一种鸡肝补血绿豆糕的制备方法,包括以下步骤;
    (1)将花生衣、洛神花、牛奶根、红豆皮、鸡血藤、白芍、党参、阿胶粉碎后混合均匀,用纱布包裹与洗净后的鸡肝一同放入锅中,加入相当于鸡肝重量8-12倍量的水,中火熬煮40-60min,取出纱布包,打浆,浓缩,真空冷冻干燥,得鸡肝冻干粉;将制得的鸡肝冻干粉与蜂蜜、豆沙搅拌均匀,即得馅料,待用;
    (2)将绿豆粉、绵白糖、小磨麻油、精面粉、柿霜、樱桃核粉、山楂核粉混合均匀,充分拌和搅透,过60-80目筛,即得糕粉,待用;
    (3)将糕粉填入刻有图案的模板内,然后每个模板潭内分别放入一小块馅料,揿平,再用糕粉铺满压实,刮平,脱模,即得糕坯;
    (4)将糕坯隔水大火蒸10-15分钟,待糕边缘发松且不粘手即好,蒸熟冷却后在糕面刷一层麻油即成。 
本发明的有益效果:
    本发明采用花生衣、洛神花、牛奶根、红豆皮、鸡血藤等中药辅助熬煮鸡肝,上述中药均具有补血作用,可以大大提高鸡肝的营养保健功能,然后将鸡肝冻干粉与豆沙混合,作为绿豆糕的馅料,可以显著提高绿豆糕的补血保健功能;本发明绿豆糕中还添加了柿霜、樱桃核粉、山楂核粉等功能性成分,可以拓宽绿豆糕的营养保健价值。本发明绿豆糕营养丰富,口感松软,清香肥甜,无异味,是集绿色、天然、营养、保健于一体的的休闲食品,适合各类人群食用,特别适合贫血患者食用。
具体实施方式
    一种鸡肝补血绿豆糕,由下列重量(kg)的制成:绿豆粉 25、绵白糖 20、小磨麻油16、精面粉 4、柿霜 2、樱桃核粉 2、山楂核粉2、蜂蜜 3、豆沙5、鸡肝 5、花生衣 0.5、洛神花0.6、牛奶根 0.4、红豆皮 0.3、鸡血藤0.4、白芍0.2、党参 0.4、阿胶0.2。
    一种鸡肝补血绿豆糕的制备方法,包括以下步骤;
    (1)将花生衣、洛神花、牛奶根、红豆皮、鸡血藤、白芍、党参、阿胶粉碎后混合均匀,用纱布包裹与洗净后的鸡肝一同放入锅中,加入相当于鸡肝重量10倍量的水,中火熬煮50min,取出纱布包,打浆,浓缩,真空冷冻干燥,得鸡肝冻干粉;将制得的鸡肝冻干粉与蜂蜜、豆沙搅拌均匀,即得馅料,待用;
    (2)将绿豆粉、绵白糖、小磨麻油、精面粉、柿霜、樱桃核粉、山楂核粉混合均匀,充分拌和搅透,过80目筛,即得糕粉,待用;
    (3)将糕粉填入刻有图案的模板内,然后每个模板潭内分别放入一小块馅料,揿平,再用糕粉铺满压实,刮平,脱模,即得糕坯;
(4)将糕坯隔水大火蒸15分钟,待糕边缘发松且不粘手即好,蒸熟冷却后在糕面刷一层麻油即成。

1.一种鸡肝补血绿豆糕,其特征在于,由下列重量份的制成:绿豆粉 25-30、绵白糖 18-22、小磨麻油15-20、精面粉 3-5、柿霜 2-3、樱桃核粉 2-3、山楂核粉1-3、蜂蜜 3-4、豆沙4-6、鸡肝 3-5、花生衣 0.4-0.6、洛神花0.5-0.8、牛奶根 0.3-0.6、红豆皮 0.2-0.4、鸡血藤0.3-0.5、白芍0.2-0.3、党参 0.4-0.5、阿胶0.1-0.3。
2.根据权利要求1所述的一种鸡肝补血绿豆糕,其特征在于,由下列重量份的制成:绿豆粉 25、绵白糖 20、小磨麻油16、精面粉 4、柿霜 2、樱桃核粉 2、山楂核粉2、蜂蜜 3、豆沙5、鸡肝 5、花生衣 0.5、洛神花0.6、牛奶根 0.4、红豆皮 0.3、鸡血藤0.4、白芍0.2、党参 0.4、阿胶0.2。
3.一种如权利要求1或2所述的鸡肝补血绿豆糕的制备方法,其特征在于包括以下步骤;
将花生衣、洛神花、牛奶根、红豆皮、鸡血藤、白芍、党参、阿胶粉碎后混合均匀,用纱布包裹与洗净后的鸡肝一同放入锅中,加入相当于鸡肝重量8-12倍量的水,中火熬煮40-60min,取出纱布包,打浆,浓缩,真空冷冻干燥,得鸡肝冻干粉;将制得的鸡肝冻干粉与蜂蜜、豆沙搅拌均匀,即得馅料,待用;
