本发明公开了一种水晶鸡杂的制作方法,它的步骤如下:(1)按以下重量份数配制水晶鸡杂的原料:鸡血180-200、鸡爪180-200、鸡胗50-60、鸡心50-60、葱末8-10、姜末8-10、盐8-10、水800-1000;(2)将鸡血焯熟切小块,将鸡胗、鸡心煮熟后切小丁,将鸡爪洗净,用刀切寸断,在开水中预煮至4-5成熟;(3)在锅中加清水,加入鸡爪、鸡胗、鸡心、葱末、姜末,大火烧开,小火慢炖25-30分钟,然后加入盐、鸡血慢炖5-8分钟,冷却后切片或切条,包装封口,冷冻或冷藏。本发明将鸡杂原料同时利用,通过先期的预处理,去除腥味、异味,再调味制熟,包装成熟制产品,既提高了鸡副产品的食用价值,又增加了卖点。

本发明涉及一种鸡肉食品加工技术领域,具体涉及一种水晶鸡杂的制作方法。
背景技术
现在的鸡副产品或其加工制品有以下缺点:食用口感、色泽不佳,不易入味;保质期短影响产品的正常销售和流通;其产品的商品价值不高。一般情况下,鸡副产品多数是冻品原料销售,其加工制品市场并不多见,但食用价值比较高,如鸡胗的药用价值,鸡爪的美容滋补作用等,在酒店的菜单上一般常见鸡爪、鸡胗、鸡心,但卖相和口感不理想,如爆炒鸡胗、凉拌鸡心、卤鸡爪,鸡胗在爆炒后的食用口感较差,并且入味效果不好,鸡胗、鸡心处理不好会带腥气。
发明内容
本发明的目的是提供一种水晶鸡杂的制作方法。
本发明的技术方案是:一种水晶鸡杂的制作方法,它的步骤如下:
(1)按以下重量份数配制水晶鸡杂的原料:鸡血180-200、鸡爪180-200、鸡胗50-60、鸡心50-60、葱末8-10、姜末8-10、盐8-10、水800-1000;
(2)将鸡血焯熟切小块,将鸡胗、鸡心煮熟后切小丁,将鸡爪洗净,用刀切寸断,在开水中预煮至4-5成熟;
(3)在锅中加清水,加入鸡爪、鸡胗、鸡心、葱末、姜末,大火烧开,小火慢炖25-30分钟,然后加入盐、鸡血慢炖5-8分钟,冷却后切片或切条,包装封口,冷冻或冷藏。
本发明的有益效果是:本发明将原料去腥、去异味,预熟处理,加工成以凉拌菜的形式,经过分切包装,成为一个产品,鸡杂原料经水煮、冷藏的方法,加工处理会带给食用者漂亮的外观和美感,增强食欲。
本发明以具有美容养颜效果的鸡爪为主料,通过煮制将营养溶解到汤汁里面,冷却为食用口感和疗效俱佳的菜点;鸡爪、鸡胗、鸡心、鸡血四种鸡副产品的有效搭配,形成外观色泽明显的美感,提高食欲,更方便于消化和吸收。
本发明将鸡杂原料同时利用,通过先期的预处理,去除腥味、异味,再调味制熟,包装成熟制产品,既提高了鸡副产品的食用价值,又增加了卖点。本发明经常食用可以起到美容和滋补的疗效,其次是产品冷冻或冷藏销售为产品提供很乐观市场前景。

(1)配制水晶鸡杂的原料:鸡血180 kg、鸡爪180 kg、鸡胗50 kg、鸡心50 kg、葱末8 kg、姜末8 kg、盐8 kg、水800 kg;
(2)将鸡血焯熟切小块,将鸡胗、鸡心煮熟后切小丁,将鸡爪洗净,用刀切寸断,在开水中预煮至4-5成熟;
