- 족발 1개의 기준으로 한입에 먹기 용이한 크기로 족발을 직경5cm 내외의 정육면체형태로 절단하여 준비하는 제 1공정,적당량의 물에 황기, 엄나무, 가시오가피, 구기자 오미자 토사자 등 한약재를 넣어4시간 이상 끓여 한방육수를 만드는 제 2 공정,한방육수에 족발을 넣고 3시간 이상 끓이는 제 3 공정,삶은 족발을 짚, 장작 등 쎈불에 직화하여 육질에 피막을 형성하는 제 4 공정삶은 족발을 상온에서 식힌 다음 몰로키아 분말을 적당량 뿌려준 후 저온 숙성 실에서 24시간의 범위로 저온 숙성하는 제 5 공정,청국장과 마요네즈를 배합한 저염도청국장양념, 고춧가루와 배합한 매운양념장, 쌀미음, 생강, 마늘, 식초, 꿀, 올리브유, 과일 등을 넣어 믹서에 갈아 배합하여 소프트양념장을 만드는 제 6 공정,양념장을 24시간 ∼ 48시간 범위에서 저온 숙성하는 제 7 공정,이와 같이 숙성된 양념 깍두기 족발을 질그릇에 담아 훈제가마에 넣고 2시간 훈제하는 제 8 공정을 거쳐 완성되는 훈제 깍두기 족발의 제조방법.
- 청구항 1에서 청국장과 마요네즈를 배합한 저염도청국장양념, 고춧가루와 배합한 매운양념장, 소프트양념장을 입혀 숙성 훈제하여 깍두기형태로 제조된 훈제족 발에 기호에 따라 탕수용소스를 사용하면 족발 탕수육, 치즈를 족발에 뿌려 오븐에 구워주면 족발 그라탱, 핫소스, 간장소스 등 다양한 소스의 선택으로 기호에 따른 맛을 가질 수 있는 배합된 소스가 분리되어 포장판매가 용이한 훈제 깍두기 족발의 제조방법.
