一种蟹味小麦胚芽粉及其制备方法,其特征在于由下列重量份的原料制成:小麦胚芽400-440、枳实1.5-2、合欢花2-2.2、南瓜叶1.3-1.8、花生壳2.2-2.5、厚朴花2.5-2.8、人参芦1-1.2、苘麻根3-3.4、玉米粉10-11、红薯粉9-10、大米20-22、蟹肉7-8、蟹黄3-4、酵母0.2-0.3、营养添加剂3-4。本发明添加的玉米粉、红薯粉有效的改善了本发明的口感,且使得本发明香甜可口,同时本发明添加的蟹肉、蟹黄含有丰富的蛋白质,营养丰富、鲜味十足,此外,本发明还具有解郁安神、理气开胃、利湿解毒的功效,是一种绿色保健食品。

本发明属于食品加工技术领域,涉及一种小麦胚芽,尤其涉及一种蟹味小麦胚芽粉及其制备方法。 
背景技术
小麦胚芽是小麦中营养价值最高的部分,含丰富的维他命E、B1及蛋白质。现在市场上销售的有关小麦胚芽的产品口味品种少,且多不具有保健功能,已不能满足消费者日益增长的需求。 
发明内容
本发明的目的是提供一种蟹味小麦胚芽粉及其制备方法,本发明具有风味独特、营养丰富的特点。 
本发明所采用的技术方案是: 
一种蟹味小麦胚芽粉,其特征在于由以下重量份的原料制成:
小麦胚芽400-440、枳实1.5-2、合欢花2-2.2、南瓜叶1.3-1.8、花生壳2.2-2.5、厚朴花2.5-2.8、人参芦1-1.2、苘麻根3-3.4、玉米粉10-11、红薯粉9-10、大米20-22、蟹肉7-8、蟹黄3-4、酵母0.2-0.3、营养添加剂3-4;
所述营养添加剂由下列重量份原料制成:鸡内金1-1.3、昆布1.4-1.6、胡萝卜叶0.8-0.9、显子草1-1.1、豆腐乳5-6、火龙果25-30;
    制备方法为:(1)将鸡内金、昆布、胡萝卜叶、显子草加5-6倍的水文火煎煮30-35分钟,过滤除渣,得提取液;
    (2)将豆腐乳加提取液打浆,小火加热,熬至粘稠,得调味汁;
    (3)取火龙果肉,切块,加调味汁拌匀,送入烘箱烘至含水量降至7-8%时出料,进行粉碎,即得。
    所述的蟹味小麦胚芽粉的制备方法,其特征在于包括以下步骤: 
    (1)将枳实、合欢花、南瓜叶、花生壳、厚朴花、人参芦、苘麻根装入纱布袋,与大米混合投入锅中,加4-5倍的水,大火煮沸后将纱布袋捞出,得到大米粥;
    (2)将蟹肉、蟹黄隔水大火蒸15-20分钟后取出,与大米粥混合打浆,所得浆液在30-40℃下加入酵母,发酵2-3小时;
    (3)将小麦胚芽与步骤(2)所得物料混合拌匀,送入蒸箱,在100℃下蒸制20-25分钟后出料,送入烘箱,烘干后粉碎;
    (4)将步骤(3)所得物料与剩余物料混合投入炒锅中,小火翻炒10-15分钟,即得。
本发明的有益效果为: 
    本发明添加的玉米粉、红薯粉有效的改善了本发明的口感,且使得本发明香甜可口,同时本发明添加的蟹肉、蟹黄含有丰富的蛋白质,营养丰富、鲜味十足,此外,本发明还具有解郁安神、理气开胃、利湿解毒的功效,是一种绿色保健食品。
具体实施方式
    一种蟹味小麦胚芽粉,其特征在于由以下重量份(公斤)的原料制成: 
小麦胚芽400、枳实1.5、合欢花2.2、南瓜叶1.8、花生壳2.5、厚朴花2.8、人参芦1.2、苘麻根3.4、玉米粉11、红薯粉10、大米22、蟹肉8、蟹黄4、酵母0.2、营养添加剂4;
所述营养添加剂由下列重量份(公斤)原料制成:鸡内金1.3、昆布1.6、胡萝卜叶0.8、显子草1.1、豆腐乳6、火龙果30;
    制备方法为:(1)将鸡内金、昆布、胡萝卜叶、显子草加5-6倍的水文火煎煮30-35分钟,过滤除渣,得提取液;
    (2)将豆腐乳加提取液打浆,小火加热,熬至粘稠,得调味汁;
    (3)取火龙果肉,切块,加调味汁拌匀,送入烘箱烘至含水量降至7-8%时出料,进行粉碎,即得。

1.一种蟹味小麦胚芽粉,其特征在于由以下重量份的原料制成:
小麦胚芽400-440、枳实1.5-2、合欢花2-2.2、南瓜叶1.3-1.8、花生壳2.2-2.5、厚朴花2.5-2.8、人参芦1-1.2、苘麻根3-3.4、玉米粉10-11、红薯粉9-10、大米20-22、蟹肉7-8、蟹黄3-4、酵母0.2-0.3、营养添加剂3-4;
所述营养添加剂由下列重量份原料制成:鸡内金1-1.3、昆布1.4-1.6、胡萝卜叶0.8-0.9、显子草1-1.1、豆腐乳5-6、火龙果25-30;
    制备方法为:(1)将鸡内金、昆布、胡萝卜叶、显子草加5-6倍的水文火煎煮30-35分钟,过滤除渣,得提取液;
将豆腐乳加提取液打浆,小火加热,熬至粘稠,得调味汁;
取火龙果肉,切块,加调味汁拌匀,送入烘箱烘至含水量降至7-8%时出料,进行粉碎,即得。
2.根据权利要求1所述的蟹味小麦胚芽粉的制备方法,其特征在于包括以下步骤:
将枳实、合欢花、南瓜叶、花生壳、厚朴花、人参芦、苘麻根装入纱布袋,与大米混合投入锅中,加4-5倍的水,大火煮沸后将纱布袋捞出,得到大米粥;
将蟹肉、蟹黄隔水大火蒸15-20分钟后取出,与大米粥混合打浆,所得浆液在30-40℃下加入酵母,发酵2-3小时;
将小麦胚芽与步骤(2)所得物料混合拌匀,送入蒸箱,在100℃下蒸制20-25分钟后出料,送入烘箱,烘干后粉碎;
将步骤(3)所得物料与剩余物料混合投入炒锅中,小火翻炒10-15分钟,即得。
