本发明公开了一种桂香鸡肉味调味粉,是由下述重量份的原料制成:鸡胸肉30-40、桂花6-8、冬瓜10-15、玉米淀粉4-5、紫甘蓝1-2、黑枸杞2-3、无花果2-3、百合1-2、山萸肉3-4、黄皮核1-2、桑枝1-2、甘松2-3、香菇粉3-4、薏仁油5-6、食盐3-4、鸡精1-2、桂花酒8-10;本发明以鸡胸肉、桂花、冬瓜为主料,辅以多种配料,制成一种营养丰富、具有桂花酒香的调味粉,其质地细腻、色泽均匀,加入多种中药成分,使其具有化痰止咳、降血糖、醒脾健胃、补益肝肾、防癌抗癌的功效。

技术领域
本发明涉及一种调味粉,尤其涉及一种桂香鸡肉味调味粉及其制备方法。
背景技术
调味粉是人们制作食品时必不可少的辅料,但传统调味粉不具有食疗保健作用,已经不能满足现代人们对营养保健食品的需求,本发明以鸡胸肉、桂花、冬瓜为主料,制成一种具有桂花清香的调味粉。
发明内容
本发明克服了现有技术的不足,提供了一种桂香鸡肉味调味粉及其制备方法。
本发明是通过以下技术方案实现的:
一种桂香鸡肉味调味粉,是由下述重量份的原料制成:
鸡胸肉30-40、桂花6-8、冬瓜10-15、玉米淀粉4-5、紫甘蓝1-2、黑枸杞2-3、无花果2-3、百合1-2、山萸肉3-4、黄皮核1-2、桑枝1-2、甘松2-3、香菇粉3-4、薏仁油5-6、食盐3-4、鸡精1-2、桂花酒8-10。
一种桂香鸡肉味调味粉制备方法,包括以下步骤:
(1)将鸡胸肉用淡盐水清洗干净,沥干,绞成肉糜,加入3-4倍纯净水,煮沸30-40分钟,加入洗净的桂花,磨浆3-5分钟,降温至50-60℃后保温,加入肉重1-2%的木瓜蛋白酶,酶解2-3小时,升温浓缩,离心分离,得到酶解液;
(2)将冬瓜去皮去瓤后洗净,切成8-10mm的片状,送入蒸锅蒸熟,冷却后取出,在60-65℃下烘干,粉碎,得到冬瓜粉;
(3)将紫甘蓝、黑枸杞、无花果等中药原料混合粉碎,加入7-8倍沸水,文火煎煮40-50分钟,过滤,滤液喷雾干燥,得到中药粉;
(4)将上述酶解液、冬瓜粉、中药粉与玉米淀粉、香菇粉等剩余原料混合,在50-60℃下搅拌40-50分钟,再冷冻干燥,粉碎至80-100目细度,灭菌包装后得到成品。
与现有技术相比,本发明的优点是:
本发明以鸡胸肉、桂花、冬瓜为主料,辅以多种配料,制成一种营养丰富、具有桂花酒香的调味粉,其质地细腻、色泽均匀,加入多种中药成分,使其具有化痰止咳、降血糖、醒脾健胃、补益肝肾、防癌抗癌的功效。
具体实施方式
下面结合实施例对本发明作进一步详细描述:
实施例:
一种桂香鸡肉味调味粉,是由下述重量(斤)的原料制成:
鸡胸肉40、桂花8、冬瓜15、玉米淀粉5、紫甘蓝2、黑枸杞3、无花果3、百合2、山萸肉4、黄皮核2、桑枝2、甘松3、香菇粉4、薏仁油6、食盐4、鸡精2、桂花酒10。
一种桂香鸡肉味调味粉制备方法,包括以下步骤:
(1)将鸡胸肉用淡盐水清洗干净,沥干,绞成肉糜,加入4倍纯净水,煮沸40分钟,加入洗净的桂花,磨浆5分钟,降温至50℃后保温,加入肉重1%的木瓜蛋白酶,酶解3小时,升温浓缩,离心分离,得到酶解液;
(2)将冬瓜去皮去瓤后洗净,切成8mm的片状,送入蒸锅蒸熟,冷却后取出,在60℃下烘干,粉碎,得到冬瓜粉;
(3)将紫甘蓝、黑枸杞、无花果等中药原料混合粉碎,加入7倍沸水,文火煎煮50分钟,过滤,滤液喷雾干燥,得到中药粉;
(4)将上述酶解液、冬瓜粉、中药粉与玉米淀粉、香菇粉等剩余原料混合,在60℃下搅拌40分钟,再冷冻干燥,粉碎至100目细度,灭菌包装后得到成品。
Claims (2)
1.一种桂香鸡肉味调味粉,其特征在于是由下述重量份的原料制成:
鸡胸肉30-40、桂花6-8、冬瓜10-15、玉米淀粉4-5、紫甘蓝1-2、黑枸杞2-3、无花果2-3、百合1-2、山萸肉3-4、黄皮核1-2、桑枝1-2、甘松2-3、香菇粉3-4、薏仁油5-6、食盐3-4、鸡精1-2、桂花酒8-10。
2.一种如权利要求1所述的桂香鸡肉味调味粉制备方法,其特征在于包括以下步骤:
(1)将鸡胸肉用淡盐水清洗干净,沥干,绞成肉糜,加入3-4倍纯净水,煮沸30-40分钟,加入洗净的桂花,磨浆3-5分钟,降温至50-60℃后保温,加入肉重1-2%的木瓜蛋白酶,酶解2-3小时,升温浓缩,离心分离,得到酶解液;
(2)将冬瓜去皮去瓤后洗净,切成8-10mm的片状,送入蒸锅蒸熟,冷却后取出,在60-65℃下烘干,粉碎,得到冬瓜粉;
(3)将紫甘蓝、黑枸杞、无花果等中药原料混合粉碎,加入7-8倍沸水,文火煎煮40-50分钟,过滤,滤液喷雾干燥,得到中药粉;
(4)将上述酶解液、冬瓜粉、中药粉与玉米淀粉、香菇粉等剩余原料混合,在50-60℃下搅拌40-50分钟,再冷冻干燥,粉碎至80-100目细度,灭菌包装后得到成品。
