Abstract
本发明涉及经过UHT杀菌处理而制造的冷藏流通的乳饮料和LL型乳饮料,提供一种保存中不产生沉淀而稳定地乳化含有植物性甾醇、品质保持性、稳定性优异的含有植物性甾醇的乳饮料。除植物性甾醇和乳成分以外,还配合HLB为5~7的乳化剂,调制乳饮料。另外,也可以配合选自黄原胶、天然结冷胶、鹿角菜胶、酪蛋白钠和微晶纤维素中的至少1种。
Description
技术领域
本发明涉及含有植物性甾醇的乳饮料。具体地讲、本发明特别涉及经过超高温短时间杀菌(以下称为“UHT杀菌”)处理进行制造的含有植物性甾醇的乳饮料,该含有植物性甾醇的乳饮料,在保存中长期稳定地乳化含有植物性甾醇,其品质保持性和稳定性优异。另外,本发明涉及含有植物性甾醇的乳饮料的制造方法和含有植物性甾醇的乳饮料的乳化稳定方法。
背景技术
近年来,据说在日本存在着因饮食生活的西方化、多样化和生活方式的变化等引起的过量摄取胆甾醇(cholesterol)的倾向。由于食品中所含的胆甾醇的过量摄取,使血液中的胆甾醇增加,由此成为诱发高血脂症、动脉硬化、心律不齐、心肌梗塞等心血管疾病的主要原因。现在,这些疾病有增长的趋势。因此,作为一种阻碍体内胆甾醇的吸收、使血清内的胆甾醇值降低的物质,植物性甾醇倍受关注。但是,植物性甾醇由于具有难溶于水和油的缺点,所以很难将其应用于食品。为了应用于食品,对使其在水和油中乳化的方法进行研究。
作为将植物性甾醇分散于水性分散液或悬浮液的方法,例如已知以下方法:以相对于高熔点脂质、非甾醇乳化剂为小于1/2(重量比)的比例,混合在150℃下熔融的植物性甾醇等高熔点脂质和单甘油酯(monoglyceride)等非甾醇乳化剂的方法(专利文献1);混合植物性甾醇和乳化剂,在60℃~200℃下加热熔融,在水性饮料或含乳化剂的水性饮料中混合该熔融物,高速搅拌所得的水性饮料,使植物性甾醇分散于水性饮料中的方法(专利文献2)等。
另外,在专利文献3中,记载了通过向饮料中添加含有如下(A)、(B)、(C)、(D)、(E)组分、并且整个系统的乳化剂的HLB值为12以上的水溶性组合物,能够调制保存稳定性优异的饮料的方法,其中,(A)为植物甾醇,(B)为选自甘油脂肪酸酯、有机酸单甘油酯、聚甘油脂肪酸酯、丙二醇脂肪酸酯、聚甘油缩合蓖麻醇酸酯、山梨糖醇酐脂肪酸酯、蔗糖脂肪酸酯和卵磷脂中的1种或2种以上的亲油性乳化剂,(C)为食用油类,(D)为至少1种亲水性的聚甘油脂肪酸酯,(E)为其余部分的水。
但是,对于经过UHT杀菌处理而制造的、在冷藏温度~常温下流通的乳饮料和作为长期保鲜(LL)制品能够流通的乳饮料,配合植物性甾醇时,存在乳化不稳定、产生沉淀的问题。

发明内容
本发明为鉴于上述情况而进行的发明,其目的在于提供稳定乳化含有植物性甾醇的乳饮料和该乳饮料的制造方法。更具体地讲,本发明的目的在于提供经过UHT杀菌处理而制造,稳定地乳化含有植物性甾醇,即使长期保存也可有意地抑制凝集或沉淀等的发生、其品质保持性和稳定性优异的含有植物性甾醇的乳饮料和该乳饮料的制造方法。
另外,本发明的目的在于提供含有植物性甾醇的乳饮料的乳化稳定方法,特别提供一种使经过UHT杀菌处理制造的含有植物性甾醇的乳饮料乳化稳定的方法,使该乳饮料即使长期保存也不发生凝集或沉淀等不良状况。
本发明的发明人等鉴于上述现有技术存在的问题,不断进行精心研究,从而发现,通过在乳饮料的原料中配合HLB为5~7的乳化剂,可以达到上述目的,能够在乳饮料中长期稳定地乳化植物性甾醇。特别对于经过UHT杀菌处理而制造的乳饮料特别有效果,抑制流通保存时产生沉淀,从而得到品质保持性、稳定性优异的含有植物性甾醇的乳饮料。本发明基于该见解而完成,涉及具有以下方式的含有植物甾醇的乳饮料。
(1)乳饮料
第1项.一种含有植物性甾醇、乳成分和HLB为5~7的乳化剂的乳饮料。
第2项.如第1项所述的乳饮料,其特征在于:HLB为5~7的乳化剂是选自山梨糖醇酐脂肪酸酯、有机酸单甘油酯、蔗糖脂肪酸酯和聚甘油脂肪酸酯中的至少1种。
第3项.如第1项的乳饮料,其特征在于:HLB为5~7的乳化剂是山梨糖醇酐脂肪酸酯。
第4项.如第1~3项中任一项所述的乳饮料,其特征在于:植物性甾醇是选自β-谷甾醇、菜油甾醇、豆甾醇、菜子甾醇、谷甾烷醇、菜油甾烷醇及其它们的酯盐中的1种或2种以上。
第5项.如第1~4项中任一项所述的乳饮料,其特征在于:含有换算成无脂乳固态成分为0.8~5重量%的乳成分。
第6项.如第1~5项中任一项所述的乳饮料,其特征在于:经过超高温短时间杀菌工序而制造。
(2)乳饮料的制造方法
第7项.一种乳饮料的制造方法,其特征在于:具有在HLB为5~7的乳化剂的存在下、对含有植物性甾醇和乳成分的乳饮料原料进行均质化和加热杀菌的工序。
第8项.如第7项所述的制造方法,其特征在于:HLB为5~7的乳化剂是选自山梨糖醇酐脂肪酸酯、有机酸单甘油酯、蔗糖脂肪酸酯和聚甘油脂肪酸酯中的至少1种。
第9项.如第7项所述的制造方法,其特征在于:HLB为5~7的乳化剂是山梨糖醇酐脂肪酸酯。
第10项.如第7~9项中任一项所述的制造方法,其特征在于:植物性甾醇是选自β-谷甾醇、菜油甾醇、豆甾醇、菜子甾醇、谷甾烷醇、菜油甾烷醇及其它们的酯盐中的1种或2种以上。

第13项.一种含有植物性甾醇的乳饮料的乳化稳定方法,其特征在于:具有在HLB为5~7的乳化剂的存在下、对含有植物性甾醇和乳成分的乳饮料原料进行均质化和加热杀菌的工序。
第14项.如第13项所述的乳化稳定方法,其特征在于:HLB为5~7的乳化剂是选自山梨糖醇酐脂肪酸酯、有机酸单甘油酯、蔗糖脂肪酸酯和聚甘油脂肪酸酯中的至少1种。

(4)HLB为5~7的乳化剂的使用
第18项.HLB为5~7的乳化剂在制造含有植物性甾醇和乳成分的乳化稳定的乳饮料中的使用。
第19项.HLB为5~7的乳化剂在使含有植物性甾醇和乳成分的乳饮料乳化稳定中的使用。
第20项.如第19项所述的使用,其特征在于:乳饮料为经过超高温短时间杀菌工序进行制造的产品。
发明的效果
根据本发明,能够在乳饮料中稳定地乳化配合植物性甾醇,并能够提供有意地抑制长期保存中油脂部分的凝集或沉淀、长期稳定地乳化植物性甾醇而形成的乳饮料。特别地,本发明适用于经过UHT杀菌处理制造的乳饮料。
具体实施方式
本发明的乳饮料涉及由于含有植物性甾醇、乳成分和HLB为5~7的乳化剂,使植物性甾醇和乳成分长期稳定地在水中乳化的乳饮料。在本发明中,如果在含有植物性甾醇和乳成分的乳饮料中存在HLB为5~7的乳化剂,则能够使该乳饮料长期稳定地乳化。
在本发明中,所谓乳饮料是指含有乳成分的中性或弱酸性的饮料。优选是pH为5.5~8的范围的饮料。这里,乳成分是指生乳、牛乳或特别牛乳、或者将这些作为原料而制造的成分。作为乳成分,具体可以列举生乳、牛乳、特别牛乳、生奶油、全脂奶粉、脱脂奶粉、全脂炼乳和脱脂炼乳等。乳饮料中的乳成分的含量没有限制,通常换算成无脂乳固态成分为0.8重量%以上,优选为0.8~5重量%的范围,更优选配合植物性甾醇时易产生沉淀的2~5重量%的范围。
作为乳饮料,没有限制,可以列举咖啡乳饮料、牛奶咖啡、奶茶、可可奶(MilkCocoa)、奶昔(milk shake)、汤、水果乳饮料、蛋乳饮料、抹茶乳饮料和豆乳乳饮料等。
本发明作为对象的乳饮料,优选为经过UHT杀菌处理而制造的乳饮料。UHT的加热杀菌条件(加热杀菌温度和时间),没有限制,可以列举通常在120~145℃,2~120秒左右。优选列举以下方法:使用板式热交换器或管式热交换器等,在130~142℃,对混合后的乳饮料原料进行加热杀菌2~5秒左右的方法。
本发明所用的植物性甾醇为从大豆、菜籽或棉籽等植物油脂中提取、或者根据需要精制的制品。具体可以列举以选自β-谷甾醇、菜油甾醇(campesterol)、豆甾醇、菜子甾醇、谷甾烷醇、菜油甾烷醇及其它们的酯盐中的1种或2种以上为主要成分的植物性甾醇。优选以选自β-谷甾醇、菜油甾醇、豆甾醇及其它们的酯盐中的1种或2种以上为主要成分的植物性甾醇。
配合于乳饮料中的植物性甾醇的形态,没有特别地限制。例如,可以是粉末等固体形态,也可以使之溶解或分散于水或乙醇等溶剂中的液体形态。优选为经过加工使其成为水易溶性的状态。作为将植物性甾醇加工成水易溶性的方法,可以不受限制地使用公知的方法。没有限制,但可以列举如下几种方法:将植物性甾醇与甘油脂肪酸酯、聚山梨醇酯(polysorbate)等亲油性乳化剂和糊精(dextrin)混合搅拌,经过筛分、流动层造粒和喷雾干燥,使其成为粉末的方法(例如,参照特开2005-269941号公报);将植物性甾醇加热到融点以上的温度并融解后,与含有阿拉伯树胶、蔗糖脂肪酸酯或甘油脂肪酸酯等乳化剂、水和多元醇的液体混合,使其乳化或可溶化的方法;将植物性甾醇、上述乳化剂混合后,加热到融点以上并融解后,混合水和多元醇,使其乳化或可溶化的方法;将植物性甾醇、上述乳化剂、水和多元醇混合后,加热到融点以上并融解后,使其乳化或可溶化的方法(以上参照专利第3535147号)等。
可以通过商业渠道获得经过加工使其成为水易溶性的植物性甾醇。可以列举例如三栄源有限公司制造的サンステロ一ル[商标]系列(サンステロ一ルNo.1)。另外,在使该植物性甾醇成为粉末时,也可以添加下述HLB为5~7的乳化剂。
作为植物性甾醇相对乳饮料的混合比例,可以例示通常为0.01~5重量%,优选为0.05~3重量%,更优选为0.2~2重量%。
本发明中使用的HLB为5~7的乳化剂,只要HLB在5~7的范围内就没有特别地限制,具体可以列举山梨糖醇酐脂肪酸酯、蔗糖脂肪酸酯、有机酸单甘油酯(琥珀酸单甘油酯、柠檬酸单甘油酯、二乙酰酒石酸单甘油酯、乙酸单甘油酯、乳酸单甘油酯)、甘油脂肪酸酯(单甘油脂肪酸酯、二甘油脂肪酸酯)、聚甘油脂肪酸酯、丙二醇脂肪酸酯、硬脂酰基乳酸盐、丝兰(yucca)提取物、皂草苷(saponin)、卵磷脂、聚山梨醇酯(polysorbate)等乳化剂。其中,优选使用山梨糖醇酐脂肪酸酯、蔗糖脂肪酸酯、有机酸单甘油酯(琥珀酸单甘油酯、柠檬酸单甘油酯、二乙酰酒石酸单甘油酯、乙酸单甘油酯、乳酸单甘油酯)、或聚甘油脂肪酸酯。可以单独地使用这些乳化剂中的1种,也可以任意组合使用其中的2种以上。更优选的乳化剂为山梨糖醇酐脂肪酸酯。另外,可以通过商业渠道获得HLB在5~7的范围内的乳化剂。例如,作为HLB为5~7山梨糖醇酐脂肪酸酯的一例,可以列举三栄源有限公司制造的ホモゲン[商标]系列。
乳化剂相对乳饮料的混合比例,因所用的植物性甾醇的浓度、乳饮料的种类、制品的流通状态等而不同,可以列举通常为0.005~1重量%,优选为0.05~0.7重量%,更优选为0.1~0.5重量%。另外,虽然配合超过1重量%也不会影响乳化稳定性的本发明的效果,但是存在因乳化剂特有的风味变强而影响最终乳饮料的风味的情况。
另外,本发明的乳饮料,除上述HLB为5~7的乳化剂以外,还可以配合选自黄原胶(xanthan gum)、天然结冷胶(native gellan gum)、鹿角菜胶(carrageenan)、酪蛋白钠和微晶纤维素中的1种或2种以上。通过配合这些成分,可以进一步提高防止长期保存含有植物性甾醇的乳饮料时发生油脂成分的凝集或沉淀的效果。这些成分相对乳饮料的配合比例,没有限制,可以例示按其总量计为0.005~1重量%,优选为0.01~0.5重量%,更优选为0.02~0.2重量%。
另外,作为上述微晶纤维素,可以广泛使用一般用作食品、饮料用的分散剂或稳定剂的制品。微晶纤维素可以使用微晶纤维素其自身,也可以适当地使用以特定的比例含有分散剂或崩解剂的微晶纤维素的复合体。作为分散剂或崩解剂,可以例示羧甲基纤维素钠、半乳甘露聚糖(瓜尔胶、酶分解瓜尔胶、刺槐豆胶、塔拉胶(tara gum)等)、聚葡萄糖(polydextrose)、难消化性糊精、阿拉伯树胶、阿拉伯半乳聚糖(arabinogalactan)、海藻酸及其盐、热凝胶多糖(curdlan)、印度胶(ghatti gum)、鹿角菜胶、刺梧桐树胶(karaya gum)、琼脂、黄原胶、车前草种子胶、罗望子种子胶、结冷胶、明胶、黄蓍胶、红藻胶、普鲁兰多糖(pullulan)、果胶等。其中,优选为羧甲基纤维素钠、鹿角菜胶、刺梧桐树胶、黄原胶、结冷胶、难消化性糊精和果胶。作为微晶纤维素的复合体的制造方法,可以列举例如特公昭40-14174号公报、特公昭62-43661号公报和特开平6-335365号公报等所记载的方法。具体可以列举将研磨纸浆(pulp)所得的微晶纤维素与上述分散剂和崩解剂等均匀地混合,从而形成均质的浆料,并干燥其的方法。另外,作为微晶纤维素的晶粒的尺寸没有限制,优选平均粒径为20μm以下,优选为10μm以下,更优选为5μm以下。
可以通过商业渠道获得这种微晶纤维素。例如,可以列举旭化成株式会社制造的アビセル[商标]系列或セオラス[商标]系列、以及三栄源有限公司制造的ホモゲン[商标]No.1610、ホモゲン[商标]No.1855等。
本发明的含有植物性甾醇的乳饮料,可以含有上述的植物性甾醇、乳成分和HLB为5~7的乳化剂,根据需要含有选自黄原胶、天然结冷胶、鹿角菜胶、酪蛋白钠和微晶纤维素中的至少1种,除此之外任意含有糖类、甜味剂、高甜度甜味剂、咖啡、红茶、可可、抹茶、巧克力(chocolate)、蛋黄或蛋白等的蛋制品、酸味剂、调味剂、色素、香料、果汁、酱状食品、保存料、提取物、糊剂、pH值调节剂、酒类、维生素、其它矿物质类等。
作为糖类,可以列举砂糖、果糖、葡萄糖、糖稀、还原性糖稀、蜂蜜、异构化糖、转化糖、低聚糖(例如、异麦芽糖低聚糖、还原木糖低聚糖、还原龙胆低聚糖、木糖低聚糖、龙胆低聚糖、黑曲霉低聚糖、テアンデ低聚糖、大豆低聚糖等)、海藻糖、糖醇(麦芽糖醇、赤藓糖醇、山梨糖醇、帕拉金糖醇、木糖醇、乳糖醇等)、砂糖结合糖稀(结合糖)等。
作为高甜度甜味剂,可以列举阿斯巴甜糖(aspartame)、乙酰磺胺酸钾(acesulfame-K)、三氯蔗糖(sucralose)、埃利坦(alitame)、纽甜(neotame)、甘草提取物(甘草甜素)、糖精、糖精钠、甜菊提取物、甜菊末等。
另外,只要不影响本发明的效果,可以在本发明的乳饮料中配合上述的HLB为5~7的乳化剂以外的乳化剂。作为所述乳化剂,具体可以例示以下具有HLB5~7以外的HLB的蔗糖脂肪酸酯、甘油脂肪酸酯(单甘油脂肪酸酯、二甘油脂肪酸酯)、聚甘油脂肪酸酯、聚甘油缩合蓖麻醇酸酯、山梨糖醇酐脂肪酸酯、硬脂酰基乳酸盐(钠盐、钙盐)、丝兰(yucca)提取物、皂草苷、卵磷脂和聚山梨醇酯(polysorbate)等。优选为蔗糖脂肪酸酯、甘油脂肪酸酯(单甘油脂肪酸酯、二甘油脂肪酸酯)。通过使用这些乳化剂,可以补充HLB为5~7的乳化剂的乳化稳定作用,进一步提高抑制油脂成分的凝集或沉淀的效果。
再者,只要不影响本发明的效果,可以在本发明的乳饮料中配合稳定剂。作为稳定剂,具体可以例示脱酰型结冷胶、琼脂、明胶、果胶、木薯淀粉或玉米淀粉等淀粉、乳清蛋白质、刺槐豆胶、瓜尔胶、阿拉伯树胶、葡糖甘露聚糖(glucomannan)、塔拉胶、鲁兰多糖(pullulan)、罗望子种子胶、黄蓍胶、刺梧桐树胶、海藻酸、海藻酸钠、Macrophomopsis胶、羧甲基纤维素、微小纤维状纤维素、发酵纤维素、大豆多糖类和糊精等。
(2)含有植物性甾醇的乳饮料的制造方法
上述本发明的乳饮料,经过在HLB为5~7的乳化剂的存在下,对含有植物性甾醇和乳成分的乳饮料原料进行均质化和加热杀菌的工序能够调制。
均质化可以采用一般方法。例如可以列举利用市售的高速搅拌机(homomixer)或均化器(homogeniser)进行处理的方法。优选进行2阶段均质化。作为均质化条件,可以列举例如在进行2阶段均质化时,在60~80℃下,第一阶段:9.8×106Pa(100kgf/cm2)、第二阶段:4.7×106Pa(50kgf/cm2)的计14.7×106Pa(150kgf/cm2)的条件。另外,可以重复数次均质化。
加热杀菌一般为混合全部乳饮料原料、并均质化后,填充到容器内密封后进行加热杀菌。加热杀菌方法,没有特别限制,可以广泛应用适用于饮料的加热杀菌方法。优选UHT杀菌法。该UHT杀菌可以使用板式热交换器或管式热交换器等热交换器进行。加热杀菌条件,也没有特别限制,但例如蒸煮杀菌时,可以例示在110~140℃下杀菌10~40分钟,具体为在121℃下杀菌30分钟左右的条件。另外,使用热交换器进行加热杀菌(UHT杀菌)时,若是低温流通品,可以例示在130℃下杀菌2~5秒左右的加热杀菌条件,若是PET瓶(PET bottle)装或罐装的乳饮料等常温流通品,可以例示在140℃下杀菌15~60秒左右的加热杀菌条件。
本发明的乳饮料,由于含有上述HLB为5~7的乳化剂,所以即使进行加热杀菌处理,也不发生油脂成分的凝集或沉淀。另外,经过处理而调制的乳饮料,可以在长时间内,不发生油脂成分的凝集或沉淀,能够使植物性甾醇稳定乳化。
另外,上述均质化和加热杀菌工序,除HLB为5~7的乳化剂以外,还在选自黄原胶、天然结冷胶、鹿角菜胶、酪蛋白钠和微晶纤维素中的1种或2种以上的存在下进行。由于在这些成分的存在下进行,可以进一步提高HLB为5~7的乳化剂所具有的防止油脂成分的凝集或沉淀的发生的效果。再者,上述均质化和加热杀菌工序,除HLB为5~7的乳化剂以外,或者除HLB为5~7的乳化剂和选自黄原胶、天然结冷胶、鹿角菜胶、酪蛋白钠和微晶纤维素中的1种或2种以上以外,还可以在具有HLB5~7以外的HLB的甘油脂肪酸酯或蔗糖脂肪酸酯的存在下进行。
上述HLB为5~7的乳化剂等各成分的使用量,分别如上所示。
可以将如此调制的本发明的含有植物性甾醇的乳饮料填充于容器内后,密封或密闭,作为容器装产品,供应给市场。填充乳饮料的容器,只要能够密封或密闭乳饮料,就没有特别地限制。可以具体例示罐、瓶、纸袋、PET瓶、层压塑料袋(laminate pack)等各种的保存容器。
(3)含有植物性甾醇的乳饮料的乳化稳定方法
含有植物性甾醇的乳饮料,通过在HLB为5~7的乳化剂的存在下,对含有植物性甾醇和乳成分的乳饮料原料进行均质化和加热杀菌,能够稳定乳化。
该乳化稳定方法,能够通过除HLB为5~7的乳化剂以外,还在选自黄原胶、天然结冷胶、鹿角菜胶、酪蛋白钠和微晶纤维素中的1种或2种以上的存在下,进行上述均质和加热杀菌工序而实施。在这些成分的存在下进行加热杀菌,可以进一步提高HLB为5~7的乳化剂所具有的防止油脂成分的凝集或沉淀的发生的效果,给予乳饮料更优异的乳化稳定性。再者,本发明的乳化稳定方法,通过除HLB为5~7的乳化剂、或者HLB为5~7的乳化剂和选自黄原胶、天然结冷胶、鹿角菜胶、酪蛋白钠和微晶纤维素中的1种或2种以上以外,还在HLB为5~7以外的蔗糖脂肪酸酯或甘油脂肪酸酯等乳化剂的存在下,进行上述均质化和加热杀菌工序而实施。通过并用这些乳化剂,能够进一步提高HLB为5~7的乳化剂所具有的防止油脂成分的凝集或沉淀的发生的效果。
这里,HLB为5~7的乳化剂、黄原胶、天然结冷胶、鹿角菜胶、酪蛋白钠和微晶纤维素、以及其它乳化剂的使用量,分别如上所示。另外,也可以按上述方法实施均质化工序和加热杀菌方法。
实施例
以下,用实验例和实施例更详细地说明本发明。但是,本发明并不局限于这些例子。另外,实施例中的“份”和“%”分别表示“重量份”和“重量%”。
实施例1:含有植物性甾醇的乳饮料的调制
按照表1记载的配方,调制含有植物性甾醇的乳饮料。具体地讲,在表1记载的配方中,向牛乳和水的混合溶液中加入脱脂奶粉、植物性甾醇、乳化剂和碳酸氢钠的混合物,在80℃下搅拌溶解10分钟之后,用水补足全部量。在80℃下进行均质化[1阶段14.7×106Pa(150kgf/cm2)、2阶段4.9×106Pa(50kgf/cm2)]。将均质液填充于罐内,在130℃下,UHT杀菌15秒之后,水冷至40℃,调制出含有植物性甾醇的乳饮料。

将所得的含有植物性甾醇的乳饮料在8℃的冰箱里保存1昼夜之后,使用100目的筛子过滤,根据下述基准评价筛子上有无残留的沉淀物和沉淀物的量。

根据表2,可以得到以下结论。使用了HLB为5~7的乳化剂的实施例1~8的乳饮料,都没有不溶物,或者即使有也极少,因而是植物性甾醇良好且稳定地乳化的乳饮料。其中,使用了HLB为5~7的山梨糖醇酐脂肪酸酯的实施例良好。与此相反,在使用了HLB为5~7的乳化剂以外的乳化剂的乳饮料(比较例1~23)中,发现了不溶物。
工业上的可利用性
根据本发明,特别对于经过UHT杀菌处理制造的冷藏流通的乳饮料和LL型的乳饮料,能够提供保存中不产生沉淀而稳定地乳化含有植物性甾醇、品质保持性和稳定性优异的含有植物性甾醇的乳饮料。
Claims (20)
1.一种乳饮料,其特征在于:
含有植物性甾醇、乳成分和HLB为5~7的乳化剂。
2.如权利要求1所述的乳饮料,其特征在于:
HLB为5~7的乳化剂是选自山梨糖醇酐脂肪酸酯、有机酸单甘油酯、蔗糖脂肪酸酯和聚甘油脂肪酸酯中的至少1种。
3.如权利要求1所述的乳饮料,其特征在于:
HLB为5~7的乳化剂是山梨糖醇酐脂肪酸酯。
4.如权利要求1所述的乳饮料,其特征在于:
植物性甾醇是选自β-谷甾醇、菜油甾醇、豆甾醇、菜子甾醇、谷甾烷醇、菜油甾烷醇及其它们的酯盐中的1种或2种以上。
5.如权利要求1所述的乳饮料,其特征在于:
含有换算成无脂乳固态成分为0.8~5重量%的乳成分。
6.如权利要求1所述的乳饮料,其特征在于:
经过超高温短时间杀菌工序进行制造。
7.一种乳饮料的制造方法,其特征在于:
具有在HLB为5~7的乳化剂的存在下、对含有植物性甾醇和乳成分的乳饮料原料进行均质化和加热杀菌的工序。
8.如权利要求7所述的制造方法,其特征在于:
HLB为5~7的乳化剂是选自山梨糖醇酐脂肪酸酯、有机酸单甘油酯、蔗糖脂肪酸酯和聚甘油脂肪酸酯中的至少1种。
9.如权利要求7所述的制造方法,其特征在于:
HLB为5~7的乳化剂是山梨糖醇酐脂肪酸酯。
10.如权利要求7所述的制造方法,其特征在于:
植物性甾醇是选自β-谷甾醇、菜油甾醇、豆甾醇、菜子甾醇、谷甾烷醇、菜油甾烷醇及其它们的酯盐中的1种或2种以上。
11.如权利要求7所述的制造方法,其特征在于:
乳饮料原料中的乳成分的含有比例换算成无脂乳固态成分为0.8~5重量%。
12.如权利要求7所述的制造方法,其特征在于:
加热杀菌是超高温短时间杀菌。
13.一种含有植物性甾醇的乳饮料的乳化稳定方法,其特征在于:
具有在HLB为5~7的乳化剂的存在下、对含有植物性甾醇和乳成分的乳饮料原料进行均质化和加热杀菌的工序。
14.如权利要求13所述的乳化稳定方法,其特征在于:
HLB为5~7的乳化剂是选自山梨糖醇酐脂肪酸酯、有机酸单甘油酯、蔗糖脂肪酸酯和聚甘油脂肪酸酯中的至少1种。
15.如权利要求13所述的乳化稳定方法,其特征在于:
HLB为5~7的乳化剂是山梨糖醇酐脂肪酸酯。
16.如权利要求13所述的乳化稳定方法,其特征在于:
植物性甾醇是选自β-谷甾醇、菜油甾醇、豆甾醇、菜子甾醇、谷甾烷醇、菜油甾烷醇及其它们的酯盐中的1种或2种以上。
17.如权利要求13所述的乳化稳定方法,其特征在于:
乳饮料原料中的乳成分的含有比例换算成无脂乳固态成分为0.8~5重量%。
18.HLB为5~7的乳化剂在制造含有植物性甾醇和乳成分的乳化稳定的乳饮料中的使用。
19.HLB为5~7的乳化剂在使含有植物性甾醇和乳成分的乳饮料乳化稳定中的使用。
20.如权利要求19所述的使用,其特征在于:
乳饮料是经过超高温短时间杀菌工序进行制造的产品。
