Abstract

MéTODO DE PRODUçãO DE HIDROMEL. A invenção proporciona um método para a produção de hidromel saboroso com um paladar seco jamais antes visto, em que o mel com arroz koji para shochu e levedura adicionada a ele é submetido à fermentação primária. De preferência, um sabor específico pode ser conservado no mel para a extração do sabor nele contido, e usa-se koji preto ou koji branco como o arroz koji para shochu. De preferência, o peso do arroz koji para shochu é de 1% a 10% do peso do mel mais a água adicionada, e a quantidade de água adicionada é determinada de modo que o teor de açúcar do mel corresponde a 10% a 20%.
