Abstract
COMPOSIçõES ALIMENTìCIAS E MéTODOS RELACIONADOS. Composição adoçante amorfa isenta de açúcar que age com um substituto de açúcar na produção de confeito de chocolate. Xarope de maltitol pode ser empregado em uma mistura para confeito de chocolate com uma composição substituta de leite seco para formar um confeito de chocolate com melhoradas características de sabor e textura em comparação com outras composições de confeito de chocolate isentas de açúcar. Outras composições adoçantes amorfas podem ser usadas na produção de composições de chocolate. Métodos de fabricar composições de chocolate são também descritos.
