Abstract

Patente de Invenção: <B>"COMPONENTES DE CACAU, COMESTìVEIS TENDO TEOR DE POLIFENOL INTENSIFICADO, MéTODO DE FABRICAçãO DOS MESMOS E USOS MéDICOS"<D>. São descritos componentes de cacau tendo níveis melhorados de polifenóis de cacau, processos para produzir os componentes de cacau enquanto conservando uma quantidade significativa de polifenóis de cacau, composições contendo os componentes de cacau ou os polifenóis de cacau, e processos para usar os componentes de cacau ou os polifenóis de cacau para melhorar a saúde de um mamífero. Os componentes de cacau incluem sólidos de cacau parcialmente ou completamente desengordurados, polpas e frações derivadas das mesmas, extratos de polifenol de cacau, manteiga de cacau, licores de chocolate, e misturas dos mesmos. A invenção provê processos para extrair gordura de amêndoas de cacau e para de outro modo processar amêndoas de cacau para dar um componente de cacau tendo concentrações conservadas de polifenóis relativas aos materiais de partida.
