Abstract

a presente invenção refere-se a uma composição de revestimento de barreira para revestir um confeito congelado que compreende, expresso em % em peso com base no peso total do revestimento, 40 a 60% em peso de uma mistura de gorduras ou gordura, de preferência, 45 a 55% em peso, sendo que a dita mistura de gorduras ou gordura compreende os seguintes ácidos graxos: 45 <= c16:0 <= 55% em peso, 4 <= c18:0 <= 10% em peso, 30 <= c18:1 <= 39% em peso, 3 <= c18:2 <= 7% em peso de ácido linoleico, em que a dita mistura compreende um perfil de gorduras sólidas que compreende: 75% <= n 0 <= 95%; 60% <= n 10 <= 90%; 30% <= n 20 <= 60%; 18% <= n 25 <= 35%;0% <= n 30 <= 12%; e 0% <= n 35 <= 5%, e em que o dito revestimento de barreira tem limite elástico de 0,90 a 1,65 pa. a invenção também se refere ao uso de tal mistura de gorduras ou gordura para revestimentos de barreira, um método de preparação da composição de revestimento e um wafer ao menos parcialmente revestido com o revestimento de barreira.
