Abstract
Una composición de revestimiento de barrera para revestir una confitura congelada; la composición comprende, expresado en % en peso sobre la base del peso total del revestimiento, 40 - 60% en peso de grasa o mezcla de grasa, preferentemente, 45 - 55% en peso, la grasa o la mezcla de grasa comprende los siguientes ácidos grasos: 45 £ C16:0 £ 55% en peso, 4 £ C18:0 £ 10% en peso, 30 £ C18:1 £ 39% en peso, 3 £ C18:2 £ 7% en peso de ácido linoleico y la mezcla de grasa comprende un perfil de grasa sólida que comprende: 75% £ N 0 £ 95%; 60% £ N 10 £ 90%; 30% £ N 20 £ 60%; 18% £ N 25 £ 35%; 0% £ N 30 £ 12%; y 0% £ N 35 £ 5%, y el revestimiento de barrera tiene un limite elástico de 0,90 a 1,65 Pa. Además, al uso de una grasa o mezcla de grasa para revestimientos de barrera, con un método para preparar la composición de revestimiento y con un barquillo al menos parcialmente revestido con el revestimiento de barrera.
