Abstract

"PROTEìNA, MéTODOS PARA PRODUZIR UM DERIVADO DE áCIDO GLUTâMICO OTICAMENTE ATIVO E PARA PRODUZIR UMA PROTEìNA TENDO UMA ATIVIDADE DE D-AMINOTRANSFERASE, DNA,CéLULA". Substituindo-se um resíduo de aminoácido pelo menos em uma posição que participe na formação eficiente de (2R, 4R)-monatina (posição 100, posições 180 a 183, posição 243 e posição 244) na seq³ência de aminoácido de D-aminotransferase do tipo selvagem representada pela SEQ ID NO: 2 na Listagem de Seq³ência, a D-aminotransferase pode ser mutada de modo que ela possa produzir eficientemente (2R, 4R)-monatina tendo uma doçura elevada a partir do ácido 4-(indol-3-ilmetil)-4-hidróxi-2-oxoglutárico.
