Abstract
"PRODUTO DE LATICìNIO E PROCESSO". A presente invenção refere-se a um novo processo de fabricação de queijo, compreendendo a produção de um coágulo, que é forçado a desagregar-se em pequenas partículas de coalho, num processo de fluxo contínuo em linha, separação das partículas de coalho do soro e subseq³ente aquecimento e elaboração mecânica das partículas de coalho numa massa de queijo.
