Abstract
Bir mozarella türü bir peyniri hazirlamak için asagidaki adimlari içeren bir islemdir, ki burada en az bir süt fraksiyonu, en az bir mezofilik bakteri kültürü ve/veya bir termofilik baktaeri kültürü ile mayalanir, bu fraksiyonlarin her birinin bir posiyonu bir aromali sit elde etmek için süte eklenir, bu aromalanmis süt pastörize edilir ve serit-olusturan pH elde etmek ve bunu serit olusturucu kaliplama asamasina kadar korumak için en az bir organik asidin eklenmesiyle eksitilir, en az bir termofilik bakteri kültürü ile asilanir, bir çökelti elde etmek için, bir peynir mayasinin eklenmesiyle ile çökeltillir, bu çökelti karistirilan porsiyonlara bölünür, bu sekilde üretilen peynir hamuru bir mozarella türü peynir hamuru elde etmek üzere süzülür, ve bu mozarella-türü peynir kesilir, seritler haline getirilir, ve birimler halinde kaliplanir.
