Abstract

A mixture of milk, rennet and, if required, acidifying substances is held at a temperature such that curd formation does not occur, e.g. below 15 DEG C, until the enzyme action is complete and is then heated in a form in which its surface area is large in relation to its volume, e.g. to above 30 DEG C, to produce curd formation. Suitable acidifying substances are hydrochloric acid and a starter such as streptococcus thermophilus. The process is suitable for continuous operation. Examples, quoting times, temperatures and pH values, are given.
