Abstract

Process consists of, a limited and rapid fermentation of skimmed milk, using a lactic ferment, and then adding to the milk an acidifying lactic prodt. consisting of a lactic serum conc., contg. 450-500 g. of dry solids/l. of which 50-70 g. is lactic acid, and heating to 55-60 degrees C. The prodt. is passed to a cheese-making plant or to one making casein.
