Abstract

Method for preparing fresh cheese with good storage characteristics in a continuous process comprises reducing the bivalent cation content by ion exchange and simultaneously increasing the monovalent cation content. Milk is thickened by evaporation or by the addition of dried milk, to a dry matter content of about 44%, then heated. Acidifying bacteria cultures or consumption acids are added. The liquid mass is packaged in portions after which the contents are curdled.
