Abstract

Concentrated milk having no tendency to fat separation or grain formation, having no caramel colour and no scorched odour, and resembling, when diluted with water, fresh whole milk, is made by heating whole milk until the butterfat melts, homogenizing the heated milk, sterilizing by heat, e.g. heating up to 300 DEG F. or heating at 250 DEG F. for 5 min., and concentrating the sterilized milk, e.g. to 1/3 to 1/4 of its volume, by evaporation under reduced pressure, preferably at a temperature less than 140 DEG F., and preferably as a falling film. The concentrated milk may be filled directly into sterile containers, and the containers sealed. The process is applicable to concentration of milk preliminarily modified by additions of mineral salts or vitamins or by ion exchange treatment.
