Abstract
PURPOSE: To prevent the bacterial adhesion in preparing bean curd and improve the quality thereof sealing the bean curd in such a state as to be kept at a material temperature in a temperature region or above to exterminate and inactivate microorganisms.
CONSTITUTION: A soybean milk is coagulated with a coagulating agent under heating, cut to a given size, transferred to a water tank, and wholly kept at 70W80°C by the heat transfer of the bean curd material temperature under heating. The bean curd in the state is then led to a packaging machine at the temperature, and contained in a heat-resistant container, sealed directly with a lid sheet by the heat welding, etc, and rapidly cooled by the forced cooling, e.g. passing through cold water and used for the distribution while kept at 10C or below under low temperature insulation.
