Abstract

PURPOSE: To obtain an instant solid soup usable for food only by pouring hot water, having improved dispersibility and solubility, and preservation after seal opening, and good handleability in drinking, by means of specific steps.
CONSTITUTION: A soup powder material comprising α-starch, dextrin, common salt, dairy product powder, animal and vegetable fats and oils, spice powder, and seasonings is compression-molded under a pressure of 5W40kg/cm2 to give a molded soup article, and 3W15wt% of hot-melt fats and oils having a melting poit ≥35°C and a solid fat content ≤20% at 30°C is applied to the article uniformly. Hot air at a temperature above the melting point of the fats and oils is blown on the article to permeate the fats and oils into the surface layer of the article, and cooled to room temperature.
