Abstract

PURPOSE: To obtain a high-quality food having appearance like marbled meat or meet, by heating a blend of emulsion granules having a shape retention with a protein material.
CONSTITUTION: An emulsion having shape retention comprising a protein, e.g. soybean, peanut, or casein protein having heat coagulation properties, fats and oils, and water, is formed into granules by a chopper, cutter, or dicing machine, then blended with a fibrous, minced or pasty meat or protein material to give the granular emulsion content in the total weight of about 10W40%, and heated. The weight ratio of the water to the soybean protein powder is about 4W5:1 depending on the type of the protein.
