Abstract

PURPOSE: The starting material composed of protein and fat are kneaded under heating and extruded through a plurality of nozzles and the resultant fibrous products are collected to produce a food product that can be directly eaten or cooked.
CONSTITUTION: Protein such as animal meat, poultry, fish meat, dairy products, egg casein, vegetable protein and oil or fat of animal or vegetable are used as the major materials, and starch and an emulsifier are added thereto prepare the starting material. The material is adjusted so as to contain 35W45wt% protein, 20W35wt% fat and 30W45wt% water. Then, the composition is kneaded at 50W100°C to prevent the separation of the fat and to denatur the protein with heat, then extruded through fine nozzles of 0.1W0.6mm2 cross section into lines and collected through the collection nozzles into a bundle of a definite shape.
