Abstract
PURPOSE: A material containing protein is kneaded with water and oriented under hot thermoplastic state, then opened, thus producing fibrous protein food material giving texture like meat, fowl or fish or their processed products when chewed.
CONSTITUTION: A material containing protein is kneaded with about 20W65 wt% of water and oriented under heated and thermoplastic state to form sheets or rods. These products are crushed with hammer crusher or the like and opened.
