Abstract
PURPOSE: To prepare the title cooked food having excellent taste, by placing the raw material of food together with necessary amount of water in a pack having an opening, heating the pack under the time and temperature conditions necessary for the sterilization, and sealing the opening under aseptic conditions.
CONSTITUTION: A raw material of food such as curry powder, stew, meatballs, non-glutinous rice, glutinous rice, humbergers, etc. is placed in a pack having an opening, together with a necessary amount of water. The pack is sterilized by heating under proper time and temperature conditions e.g. at about 110W120°C for about 20W45 minutes. The opening of the sterilized pack containing the food material is sealed under aseptic conditions to obtain the objective cooked food. The food thus obtained is uniformly cooked and has excellent palatability, in contrast with the conventional cook-in-pouch food which often gives unevenly cooked food.
