Abstract

The pack is sterilized by heating under proper time and temperature conditions e.g. at about 110W120°C for about 20W45 minutes. The opening of the sterilized pack containing the food material is sealed under aseptic conditions to obtain the objective cooked food. The food thus obtained is uniformly cooked and has excellent palatability, in contrast with the conventional cook-in-pouch food which often gives unevenly cooked food.
