Abstract

PURPOSE: To prevent the change in quality of a food and make it possible to store the food by heating for a long term, by incorporating sucrose ester of fatty acids comprising palmitic and stearic acids in a specific composition ratio and a specific amount of a monoester into a liquid food sterilized by heat.
CONSTITUTION: Sucrose ester of fatty acids comprising 70% or more palmitic acid and 30% or less stearic acid in the constituent fatty acid and 70% or more a monoester is incorporated into a liquid food sterilized by heat, e.g. a canned food, to prevent the change in quality thereof during the storage at a high temperature. For example, 30kg cow's milk is mixed with 10kg skim milk, 8kg sucrose, 2kg coffee extract and 50kg water, and 0.1kg sucrose ester of fatty acids comprising 70% palmitic acid and 30% stearic acid in the constituent fatty acid and 75% a monoester is incorporated into the mixture. The resulting mixture is sealed up in a 200cc can, sterilized at 120°C for 30min and stored at 45W70°C for 15 days. Tested on the stored mixture showed no detection of thermostable bacteria.
