Abstract

A concentrated liquid infant food composition comprises electrodialysed whey (e.g. cheese), heat stabilized non-fat milk (e.g. skim milk), lactose, a blend of animal and/or vegetable fats, lactose, minerals and vitamins. A process of making the composition comprises (1) concentrating the whey in one or more steps at a temperature below 165 DEG F. and then electrodialysing it, (2) stabilizing the milk by heating at 190 DEG -220 DEG F. for not more than 10 mins., (3) adding the stabilized milk to the electrodialysed whey and then adding the other components to the resultant mixture, (4) heating, homogenizing and cooling the mixture, (5) sealing the mixture in cans, (6) heating the sealed mixture at 190 DEG -220 DEG F. for not more than 15 minutes to stabilize the mixture and (7) sterilizing at, e.g., 240 DEG to 300 DEG F.
