Abstract

A cream preparation of high viscosity which can be kept for several months is obtained by separating albuminous material from whole or skim milk or cream of low fat content by treatment with rennet or a like ferment and homogenizing it with cream, the amount of the material used being about 1-6 per cent by weight of the cream. The albuminous material may be washed with milk or thin cream and then homogenized with a small portion of an aqueous liquid such as milk or thin cream and the product then homogenized with the cream, e.g. at 60-80 atmospheres. The product after homogenization at above 30 DEG C., may be filled into containers and pasteurized, e.g. for 15 minutes, at above 70 DEG C., preferably 85 DEG C., and the containers sealed and treated in an autoclave at increased pressure, e.g. for 15 minutes at 100 DEG C., and allowed to cool under pressure to about 45 DEG C., the containers being kept in motion during the heating and cooling. The product may be sterilized by heating in containers under reduced pressure diodorization being simultaneously effected.
