Abstract

A cream, the fat content of which is equivalent to or greater than that of butter and which is obtained by pasteurizing centrifugally produced cream and then recentrifuging it, is passed whilst hot into containers which are immediately sealed under vacuum. The containers may then be cooled prior to transportation. The whole of one day's production of cream may be collected in one receptacle in which it is agitated by mechanical means and while still hot passed into the containers.ALSO:A cream, the fat content of which is equivalent to or greater than that of butter and which is obtained by pasteurizing centrifugally produced cream and then recentrifuging it, is passed whilst hot into containers which are immediately hermetically sealed, if desired under vacuum. The containers may then be cooled prior to transportation. The cream may be converted into butter by kneading and, if desired, salting. The whole of one day's production of cream may be collected in one receptacle in which it is agitated by mechanical means and while still hot passed into the containers.
