Abstract

Cream is prepared for transportation and storage by centrifugally producing a cream having a fat content equal to or more than that of butter, passing it in a thin layer or film through a heat zone where it is subjected to vacuum to withdraw air from it, and then delivering it, if desired under vacuum, while still hot or after cooling into receptacles capable of being hermetically sealed. The cream may be agitated after collection from the film &c. state to improve its consistency. Salt or brine may be added to it prior to the agitation. The cream may be prepared from fresh milk or milk of low acidity by centrifuging, pasteurizing, and recentrifuging. Alternatively, the milk may be pasteurized and then subjected to a single centrifuging to give cream of the desired high fat content. The cream may be spread by centrifugal force into the thin layer or film to pass or drop downwardly through the zone where it is subjected to the heat and vacuum treatment. The cream may after storage &c. be worked without churning to convert it into butter, or this working into butter may be carried out prior to inserting it in the receptacles.
