Abstract

A food product containing at least 65 per cent of milk fat is prepared by heating cream to pasteurize it, cooling, subjecting the cream before it has cooled below the melting point of the milk fat to intense centrifugal separation, and then cooling the product so as to produce a plastic cream containing the milk fat particles still in a state of dispersion. The product may be used instead of butter, may be flavoured or treated by the addition of pure cultures or blended with other food products, or may be diluted to any desired consistency by the addition of skimmed or fresh milk giving a cream adapted for table purposes or for use in the preparation of ice cream. Specification 5810/08, [Class 84, Milking &c.], is referred to. According to the Specification as open to inspection under Sect. 91 (3) (a), the method of preparation may consist in heating cream, previously pasteurized or not, to above the melting point of the milk fat, and then subjecting to intense centrifugal separation, and the product may be converted into butter by applying direct pressure. This subject-matter does not appear in the Specification as accepted.
