Abstract

A dried, fat-containing milk product in expanded, cellular form and readily dispersible in water at 38 DEG F. is made by vacuum concentrating a fat-containing milk, e.g. pasteurized whole milk, skim milk "filled" with vegetable fat or oil, or a supplemented whole milk for infants, at a temperature at which the milk proteins remain unaltered, homogenizing the concentrate and incorporating a gas, e.g. nitrogen, therein to obtain a concentrate in which the gas is dissolved or uniformly dispersed and in which there are no fat particles above 2 microns in size, and drying and expanding the homogenized, gas-containing concentrate at a temperature at which the milk proteins remain unaltered. The dried product is, if necessary, broken up to a coarse powder.
