Abstract

297,256. Nyrop, J. E. Dec. 14, 1927. Food fats.-In the production of cream and like fatty powders from emulsions such as cream, milk, emulsions of fatty substances in skimmed milk, &c. the emulsion is homogenized and then spray-dried at a low temperature in a gaseous medium which is free or nearly free of oxygen. Small particles of fat may be dispersed in the gas into which the emulsion is atomized and a product may thus be obtained which is capable of being readily mixed with margarine to give it a vitamin content. The atomizer described in Specification 259,922, [Class 69 (iii), Spray-producers &c.], may be employed for the spray drying.
