Abstract

A whole milk powder substantially completely soluble in water at about 20 DEG C. within two minutes without stirring and characterized by (a) a butter fat content of at least 24% by weight, (b) at least 65% of the protein substances of the milk serum non-dematured, (c) a maximum particle size of fat globules of one microm, (d) a maximum free fat content of 1% and (e) an amorphous lactose content, is prepared by pasteurising standardized fresh milk, e.g. by heating to 70 DEG C. for five minutes or 90 DEG C. for from one to five seconds, degassing (if necessary), concentrating the milk to a dry solids content of 35 to 45% by weight by evaporation under reduced pressure at a temperature below 75 DEG C., e.g. using a single stage evaporator at 40 to 55 DEG C. or a multi-stage evaporator at 60 DEG C. to 75 DEG C. in the first stage and 30 DEG C. to 45 DEG C. in the last, homogenising it at a temperature of 40 to 60 DEG C. and pressure of 150 to 300 atmospheres, e.g. by forcing it through a slit at least once, preferably twice, the second time at 30 to 300 atmospheres, spray-drying the homogenised milk cooled beforehand to 5 DEG to 20 DEG C., e.g. by discharging it from a nozzle into hot air at 120 DEG C. to 300 DEG C. as described in Specification 551,656, and conveying the resultant fine powder to an agglomerating device in which the milk particles are rendered adhesive by superficial moistening, e.g. using saturated steam, and caused to agglomerate, the particles then being dried to a moisture content of 2 to 3%, cooled and stored in containers gassed with nitrogen.
