Abstract

A finely divided mixture including skimmed milk powder and liquid vegetable and/or animal fat is intimately contacted by a gas stream having a maximum temperature not exceeding 0 DEG C., the velocity and moisture content of which are so selected that the fat contained in the powder obtained acquires a crystalline structure, so that the mixture is prevented from caking. The gas stream is preferably of air substantially saturated with water vapour at a temperature of 0 DEG C. and a velocity of 5-10 m/s. The particles of the mixture after having been contacted with the said gas stream, may be contacted with at least one other gas stream, in which the direction, moisture content, velocity, and temperature are controlled independently of the first mentioned stream, which is preferably of a higher velocity than the suceeding streams.
