Abstract
,"PROCESSO PARA FABRICAR UMA DISPERSãO DE FRUTA E/OU VEGETAL COM POUCAS CALORIAS". Um processo para fabricar, ou preparar, um produto de dispersão de frutas e/ou vegetais, com poucas calorias que inclui fruta (s) e/ou vegetal (ais) natural (ais) inteiros, ou combinações dos mesmos, com melhor aroma, textura (por exemplo, sabor) , cor e valor nutricional quando comparado com produtos de dispersão de frutas e/ou vegetais feitos com processos convencionais. Mais especificamente, o processo da presente invenção inclui uma etapa de pasteurização, que utiliza um trocador de calor de superfície varrida, para fabricar produtos de dispersão de frutas e/ou vegetais com poucas calorias e teor reduzido de açúcar e com maior teor de fibras dietéticas solúveis. O processamento mínimo do presente processo permite que os produtos de dispersão de frutas e/ou vegetais produzidos retenham aroma, textura, cor, vitaminas e outros nutrientes que são, tipicamente, perdidos em produtos de dispersão de frutas e/ou vegetais processados de modo tradicional. O uso preferível no processo de embalagem em tubos de espremer elimina a necessidade de talheres com a finalidade de usar ou consumir os produtos de dispersão de frutas e/ou vegetais e serve para tornar os produtos mais portáteis.
