Claims (7)
- a) 배를 세척하여 배 과육을 분리한 후 20-30 mesh로 마쇄하는 단계,b) 상기 마쇄된 배 과육에 갈변 및 산화 방지제로, 배 과육 중량대비 비타민 C 0.5wt%; 구연산 0.04wt%; 및 차아황산소다(Sodium Hydrosulfite) 와 메타인산칼륨(Potassium Metaphosphate) 중에서 선택된 하나 이상을 첨가하는 단계,c) 상기 갈변 및 산화 방지제가 첨가된 배 과육에 증점제로, 배 과육 중량대비 분말펙틴 1wt%, 설탕 30wt% 및 올리고당 2.5wt%를 첨가하여 농축하되, 고형물 함량이 55-60Bx로 되도록 농축하는 단계,d) 상기 농축된 배 과육에, 배 과육 중량대비 배 향 0.005wt%를 첨가하는 단계 및e) 상기 배 향이 첨가된 배 과육을 살균한 후 냉각시켜 저장하는 단계를 포함하는 것을 특징으로 하는 배 스프레드의 제조방법.
