Abstract

La presente se refiere a un concentrado alimenticio con una forma dada para su uso como caldo, sazonador, sopa o salsa y su procedimiento de preparación. En particular, se refiere a caldo en cubos o sazonadores. Un objeto de la presente es el de proveer una composición concentrada alimenticia baja en grasas que presenta una textura aceptable, de buena sensación en boca, aspecto o sabor al disolverse y que no muestra grandes gotas de grasa. Se ha descubierto que puede obtenerse un concentrado alimentario estable, de una forma dada y bajo en grasas reemplazando la materia grasa en el concentrado alimenticio por almidón gelatinizado. Reivindicación 1: Un concentrado alimenticio sólido con una forma dada caracterizado porque comprende: a) entre 35% y 85% en peso de ingredientes cristalinos compuestos por al menos uno de los siguientes: sal, glutamato monosódico y azúcar; b) entre 0,1% y 10% en peso de almidón gelatinizado; c) entre 0,2% y 20% en peso de agua; y d) entre 0% y 50% en peso de componentes que imparten sabor.
