Abstract

La presente invención se refiere a un concentrado alimenticio conformado para el uso como caldo, sazonador, sopa o gravy y proceso de preparación del mismo. Particularmente se relaciona a cubos de sazonador o caldo. Es un objeto de la presente invención proporcionar una composición concentrada alimenticia baja en grasa, que tiene textura aceptable, sensación en la boca, apariencia o sabor, cuando se disuelve y no muestra un ojo de grasa grande. Se ha encontrado que puede ser obtenido un concentrado alimenticio conformado bajo en grasa por reemplazar materia grasa en el concentrado alimenticio por almidón gelatinizado.
