Abstract
Description
本発明は、第1の態様では、塩と、油及び/又は脂肪と、料理用香味料と、を含む調味料錠剤又はブイヨン錠剤であって、1〜25乾燥重量%の穀物ふすまを更に含むことを特徴とする調味料錠剤又はブイヨン錠剤を提供する。該調味料錠剤又はブイヨン錠剤は、料理食品製品を調製するのに好適である。このような料理食品製品は、例えば、スープ、コンソメ、肉料理用のソース、魚料理用のソース、又は野菜料理用のソースであってよい。
実施例1:ふすまを含むブイヨンキューブの硬化
デンプン、マルトデキストリン、及びふすまについては表1に提示される組成(合計重量パーセント)に従って、プラスチック容器内において手動で混合することにより、(合計重量パーセントで)約50%の塩化ナトリウム、15%のグルタミン酸一ナトリウム、5%のパーム油、マルトデキストリン、及びデンプン、並びに様々な野菜片及びハーブの葉、スパイス、及び香味料を含有するブイヨンキューブを調製した。得られたブイヨン塊を室温で1時間密閉容器内に放置して、キューブを形成する前に水分を適切に分布させた。次いで、5kNの荷重セルを備える機械的試験機Zwick Z005型に接続された特注ダイを使用して、キューブを調製した。4±0.01gの一定のキューブ重量及び13.1mmの縁部長さを使用した。試験したキューブの硬度の結果を図1に示す。
表2に提示される組成に従って、また、実施例1に記載の混合手順に従ってブイヨンキューブを調製した。得られたブイヨンキューブを、ProUmid製の吸収試験機器SPS型に入れて、典型的に後硬化(許容できないレベルまで硬度が増大すること)を引き起こす様々な湿度条件に該キューブを曝露した際の硬度を評価した。平均5個のキューブを、25℃にて72時間60%RHで、続いて、72時間30%RHで保存した。続いて、1.0mm/sの一定圧縮速度で実施した圧縮試験を通して、5kNの荷重セルを備える機械的試験機Zwick Z005型を使用してキューブの硬度(破壊力)を測定した。圧縮試験中の最大の力測定値において破壊力を測定した。
Claims (13)
- 塩と、油及び/又は脂肪と、料理用香味料と、を含む調味料錠剤又はブイヨン錠剤であって、1〜25乾燥重量%の穀物ふすまを更に含むことを特徴とする調味料錠剤又はブイヨン錠剤。
- 5〜10乾燥重量%の穀物ふすまを含む、請求項1に記載の錠剤。
- 前記穀物ふすまが粉砕されている、請求項1又は2に記載の錠剤。
- 前記穀物ふすまが、米糠、小麦ふすま、ソバふすま、トウモロコシふすま、オーツ麦ふすま、大麦ふすま、又はこれらの組み合わせからなる群から選択される、請求項1〜3のいずれか一項に記載の錠剤。
- 塩が、塩化ナトリウムであり、少なくとも35重量%の量で含まれる、請求項1〜4のいずれか一項に記載の錠剤。
- 前記料理用香味料が、ハーブ、スパイス、野菜粉末、肉成分又は魚成分、酵母抽出物、タンパク質加水分解物、又はこれらの組み合わせからなる群から選択される、請求項1〜5のいずれか一項に記載の錠剤。
- 結晶質グルタミン酸一ナトリウム(MSG)を更に含む、請求項1〜6のいずれか一項に記載の錠剤。
- 前記調味料錠剤又はブイヨン錠剤が、マルトデキストリンを含まない、請求項1〜7のいずれか一項に記載の錠剤。
- 200〜800ニュートンの硬度を有する、請求項1〜8のいずれか一項に記載の錠剤。
- 1〜25乾燥重量%の穀物ふすまを前記錠剤の組成物に含める工程を含む、調味料錠剤又はブイヨン錠剤の後硬化を低減する方法。
- 前記組成物にマルトデキストリンを添加する工程を含まない、請求項10に記載の方法。
- 料理食品製品を調製するための、請求項1〜9のいずれか一項に記載の調味料錠剤又はブイヨン錠剤の使用。
- 前記食品製品が、スープ、コンソメ、肉料理用のソース、魚料理用のソース、又は野菜料理用のソースである、請求項12に記載の使用。
